此餡兒的調製:
1:海米用開水+料酒泡發,切碎
2:西葫蘆用擦板擦成絲,不要擦成最細的絲,那樣口感不好,要略微粗一些
將西葫蘆絲放入盆中,加一咖啡勺的鹽拌勻,置放半個小時,讓其出水
之後用手將西葫蘆絲的水分擠幹
3:準備4個雞蛋,鍋內置油(比平時炒菜多一倍的量),油溫熱的時候將雞蛋液倒入
小火,用筷子不停的攪動,直至雞蛋呈碎米狀
4:將切好的海米丁倒入鍋中一起炒,之後關火,等雞蛋冷卻
5:將冷卻的海米雞蛋倒入裝有擠幹水分的西葫蘆絲中
6:加蔥末、鹽、雞精、胡椒粉、少許五香粉、香油,拌勻即可(不要過分攪拌)
