怎樣用雙手捏成一米長的麵條
作為四川人，麵條是我最喜歡的麵食，每天都要吃。蛋擔麵，紅油臊子麵，雞湯麵、清湯豌豆尖麵。。。百吃不厭。文革期間，我到成都，舅舅帶我到春熙路有名的擔擔麵店吃麵，當時店名改成“革命麵店”。麵碗很精致，小巧，一碗隻裝一兩麵，不像東北的碗傻大一般的，記憶中，牆上掛的菜單麵的品種起碼有七八種，四川人吃飯都很秀氣，一個人也就吃兩碗，我也不好意思多要，隻記得雞湯麵是真鮮。
在我記憶中，印象最深刻的是在樂山大佛下吃的一碗涼拌麵。那是汶川大地震後的第二年，我和家人到樂山旅遊，中午時分肚子餓了，近處沒有飯店，一個挑擔子的漢子走了過來，是賣麵條的，涼拌麵，這樣就不需要火爐了。因為時間久遠了，現在已經記不起太多細節，隻是有一點印象深刻，麵條是事先拌好的，唯獨糖是後撒的，這樣的味覺體驗還不錯，讓我這個麵條癡讚不絕口。
下麵介紹一種手工麵條，做法：中筋麵，加適量涼水，拌到沒有幹麵，揉成團，不要過度揉。放置醒二十分鍾，擀成片，對卷，均勻切成視頻那樣，這種做法可以有多種變化，麵裏麵可以加雞蛋，還可以加鹽，還可以什麽都不加，看各人口味。這樣做麵不費勁，很容易。
