材料:茄子,鹹魚,雞腿,王子菇,蠔油, 生粉,蔥,蒜蓉,鹽,糖,老抽,高湯.
做法:鹹魚切粒備用,雞腿切粒醃生粉備用,王子菇切片,熱油鍋等油熱時才切茄子放進微煎黃撈起備用,放入鹹魚煎黃後撈起備用,再放一大匙油進油鍋,爆香蒜蓉,下蠔油炒香再放入雞粒爆香大約三分鍾後放入王子菇快炒,再回放茄子炒均,下鹽,糖與老抽調味,再下三匙高湯滾後片刻讓湯汁變稠後,再回鍋鹹魚與蔥段炒均片刻即可出菜..
注:茄子鐵質多,遇風即變黑,無論蒸,煮煎,炸,一定要等到水滾,油滾後,這時才能切開茄子(就是不要讓切開的茄子長時間暴露在空氣中會發生化學作用變黑)之後立即要水蒸,煮或油煎炸,那茄子才會保持原色彩不會變黑.
