老友天涯贈我一大袋新鮮的賴尿蝦(又稱皮皮蝦或蝦姑),還兼帶著一支上等“約翰渥克的藍帶:Johnnie Walker Blue Label”,讓我這懶鬼見了這等上好的食材與美酒而食指大動不己,眼望那五,六磅的賴尿蝦腦中一直在盤算怎麽個好吃烹法而狂吞口水,我這饞辣之人想著那麻辣香味,於是把蝦分烹成了兩味來下酒.兄弟姐妹們不要流口水,來!都請來坐,齊幹杯!請大家來一起與我分享好朋友天涯的一番心意吧!Bro!Thx.
香辣賴尿蝦
材料:賴尿蝦,豆瓣醬,香辣醬,花椒一大把,八角一粒,桂皮一小片,幹辣椒兩把,蔥四條切段,蒜五粒,薑一大塊拍碎,酒,精,糖,麻油.
製法:熱油鍋小火放入蒜與薑炒出香味後再加豆瓣醬,香辣醬,花椒,八角,桂皮,幹辣椒等煸出紅油後,再放入賴尿蝦轉為大火翻炒,料酒走邊再加鹽,味精,糖等調味後,放入蔥段再炒,注入一些高湯再改中火燒五分鍾讓汁微幹入味,再澆上些許麻油就可以出菜了.

椒鹽賴尿蝦
材料:賴尿蝦,奶油大半條,蒜六辦垛成茸,蔥兩條切蔥花,鹽兩匙,胡椒粉三匙,糖少許,味精少許.
製作: 賴尿蝦洗滌幹淨,瀝幹水後微拍生粉放入大火油鍋炸成金黃撈起瀝幹油備用.再起油鍋,放奶油溶半後即放蒜茸轉大火微炸成香脆, 即回放炸好的賴尿蝦再大火炒均,邊加鹽,胡椒粉,糖,味精調味後再炒片刻至幹身,灑些蔥花即可上碟出菜。
