蝦蛋炒飯這個家常菜人人試過,但加了蝦米與菜脯就很少有人嚐過,我利用油爆蝦米增潻鮮味,菜脯脆甜的口感與甜味,使這道家常炒飯變得很不家常.
材料:蝦米一把,蝦仁一磅,甜菜脯五條,蛋兩個,蔥兩支,蒜四瓣,隔夜冷飯兩碗半,鹽,糖,味精.
製作:蝦米泡溫水軟後瀝幹,蝦仁泡生粉水十五分鍾洗凈,菜脯切成小粒,蒜片,蔥花,蛋打散備用.熱鍋放四分之一匙油,爆香三分一的蒜片後,下蝦米與菜脯粒炒香即可撈出備用.再下匙半油熱鍋後爆香餘下的蒜片,把散蛋倒進鍋內即快炒,大約七,八成熟後即把冷飯倒進再大火不停的快炒十分鍾(中間用鏟子不斷的壓壓飯貼鍋,使飯能吸收鑊氣與幹身),再放蝦仁快炒後即可回鍋蝦米與菜脯粒再壓幾下鍋再炒,放鹽,糖與味精調味下蔥花再炒片刻即可裝盤出菜.
