今天原想做個生魚片粥,而家人帶回來的卻是己泡過水與凍藏過的龍利魚肉,經過我多次用紙逼水,總覺得魚肉還是太散不夠結實,煮粥肉會爛也有魚腥味,隻好勉為其難的弄個菜遠滑魚片來下飯,但這次做得實在是差,還請大家多多指教,謝謝!
材料:龍利魚肉,油菜,草菇,紅蘿卜,雞蛋,生粉,糖,鹽,味精,料酒,高湯,茨水.
製作:魚肉切片用糖,鹽,味精,料酒,蛋白與生粉抓勻後放入冰箱醃半小時,放入七成熱油鍋中滑熟,再倒出瀝幹油備用,油菜洗凈切段過水備用,草菇過水備用,紅蘿卜切片過水備用.熱油鍋爆香蒜片後,下油菜,草菇,紅蘿卜一起大火炒香,放些高湯滾後再放糖,鹽,味精調味,勾茨再回鍋滑過的魚肉再炒勻,再放半匙明油拌勻即可出菜
