New England Clam Chowder

以前常常聽說私房是有“仙氣”的地方,在這裏求到的祝福很靈很靈的。我明天就要博士答辯了,緊張得不行。這陣子常常睡夢中都會嚇到醒,壓力太大了。。。大家祝我明天順利通過吧。多謝多謝!!

我是在波士頓念的碩士。最常與波士頓聯係起來的美食是New England Clam Chowder. 我搜了food network上的方子,試做了一回。味道還不錯,方法也簡單。大家試試唄~。

材料:牛奶兩杯,Salt Pork(美式鹹肉)2.5盎司,10盎司大小的clam罐頭一個,4杯切碎的土豆丁(兩隻頗大的土豆),1杯切碎的洋蔥丁(半個洋蔥)。

準備工作:
2.5盎司大的美式鹹肉(就一小塊)切成丁,把Clam罐頭裏的汁水撇出,備用。Clam肉稍稍切碎

用一隻厚底的鍋,開中火將鹹肉的油慢慢逼出。這個過程大約需要6-8分鍾。
將煸幹的鹹肉盛出,用細細的漏勺把鍋裏的油過濾一下。重新洗鍋熱鍋,把過濾過的幹淨的鹹肉油倒入鍋裏。

用這油炒軟洋蔥,放入土豆,兩杯牛奶,Clam罐頭的汁水。大火燒開後,轉小火慢慢燉15分鍾,時不時攪拌一下。

等土豆變軟後,用Blender把湯稍微puree一下,不用完全細滑,以能看到小粒的土豆為佳。puree完之後,把clam肉加進去,同時撒一點現磨的黑胡椒。按自己的口味放鹽。

放入clam肉之後,千萬不要煮太久,不要超過3分鍾。如果overcook,肉就會變很老。裝盤,撒一點parsley做裝飾。

在寒冷的天氣,喝一碗濃厚鮮美的clam chowder, 真是一種享受啊。
