1.老公非常喜歡吃燉的牛肉塊兒。紅燒牛肉,日式咖喱牛肉,羅鬆湯,土豆燉牛肉,蘿卜燉牛肉,番茄燉牛肉。。。
通常,我就買3.99一磅的beef for stew. 有人“教育”過我,什麽樣的牛肉才叫極品,才叫高檔。超市裏3.99一磅的牛肉如何能入口?!
他們說,真正好的牛肉,教你吃一口就會有流淚的感動,在美國是沒得賣的。
我是土人,雖然也吃過百餘美金一客的牛排,但還是更喜歡燉一鍋3.99一磅的牛肉,看著老公吃的滿頭大汗。
做的人用心,吃的人開心,也許美味的定義就是這麽簡單的。
下麵,和大家分享一下這個自己瞎想出來的亂燉牛肉。
為了不讓LG吃膩同樣的做法,我嚐試著放了一些新的原料和佐料,沒想到還挺好吃。

主要原料:牛肉一磅,洋蔥一隻,刀豆20根,土豆兩隻。
佐料:蔥段薑片適量,五香八角3-4顆,蒜兩瓣,幹辣椒少許,韓國辣椒醬1大勺,鮮橙一隻。

做法:牛肉飛水。先將小半顆洋蔥切絲,與蔥薑蒜,幹辣椒炒香。

加入牛肉翻炒,直至滿屋子都是香味,放韓式辣椒醬繼續炒。

將炒好的牛肉放入半鍋熱水中,擠入鮮橙汁(半顆就夠了),加入八角,兩勺生抽,半勺老抽,一勺黃酒,一勺糖,蓋上蓋子慢火燉45分鍾。同時,將土豆和刀豆用小火煸至表麵略硬。

45分鍾後,把刀豆和土豆,還有剩下的半顆洋蔥,放牛肉鍋裏用中火煮15分鍾。
然後開大火收汁。不用收得太幹。

2.黃芽菜炒肉絲是以前家裏外婆和媽媽經常會做的菜。有時候會放香菇/冬菇,有時候隻這兩樣單炒。我時常感到疑惑,這樣家常到不能再家常的原料,簡單到不能再簡單的做法,怎能擁有如此的清香和鮮甜。

原料:冬菇7-8朵泡軟切絲,豬裏脊一小塊,黃芽菜/白菜小半棵

做法:肉絲加鹽,酒,蔥,澱粉稍醃一會兒,熱鍋冷油劃散,盛出。
另洗鍋熱油,將黃芽菜和香炒軟,放鹽,糖。加上肉絲略炒,用澱粉水勾芡。

這道菜不需要加雞粉,醬油,耗油,胡椒粉。這些都是畫蛇添足。隻要鹽和糖,最多再加一點味精,就會非常清鮮可口。
也許,做菜和生活一樣,有時候,平平淡淡才是真吧。
