My new version

hammerheadshark:
A man knows a wine only at tipsy; 
A flower becomes a true beauty only at half-blooming.  

My revised version:
A man knows a good wine only when he is at tipsy.
A flower reaches its prime only when blooming halfway.
(Even number of  syllable and rhyme)
