Turkey Meatballs with Spaghetti - 火雞肉丸子意麵

跟同事們中午去Sabatino 吃飯, 本來是衝他們的香腸去的, 可同事們對那裏的火雞肉丸子讚不絕口, 說要買一桶子回去, waiter 說可以呀, $3 一個, 其中一位回家找了個方子, 還真的做了帶來給我們嚐, 我也很吃驚, 真得很好吃, 就要來方子也來做. 跟大家分享.

我的材料有些變動, 我這是兩份的量, 我這人就是這樣, 一樣的工夫, 要做就做多點.

因為餐館裏有摻了Provolone Cheese, 我就在中間埋了一粒Provolone Cheese cube.

很簡單, 很健康, 省了麵條還可以當減肥餐.

Ingredients:
• 20 oz (1.3 lb) ground turkey breast 99% lean
• 1/4 cup whole wheat seasoned breadcrumbs (我用了Panko breadcrumbs)
• 1/4 cup Reggiano Parmigiano cheese, grated
• 1/4 cup parsley, finely chopped
• 1 egg
• 1 large clove garlic, crushed
• 1 tsp kosher salt + fresh pepper

For the marinara sauce:
• 2 tsp olive oil
• 4 cloves garlic, smashed
• 2 28 oz cans crushed tomatoes (I like Tuttorosso)
• 1/2 small onion, keep whole (我切碎了留在裏麵)
• 1 bay leaf
• 1 tsp oregano (我用了Pizza seasoning)
• 1/4 cup fresh chopped basil
• salt and fresh pepper to taste


Directions: In a medium size pot, heat olive oil over medium heat.
Add garlic and saute until golden, being careful not to burn.
Add crushed tomatoes, onion, salt, pepper, oregano, basil and bay leaf. Stir and reduce heat to low.
Cover and let simmer.

In a large bowl, combine ground turkey, breadcrumbs, egg, parsley, garlic and cheese. Using your (clean) hands, mix all the ingredients well until everything is combined. Form small meatballs, about the size of a ping ball (1/8th cup each).

Add the meatballs to the sauce and cook about 20 minutes. Discard the onion and serve over pasta or on whole wheat Italian bread for a meatball hero.
