意大利臘腸合子 - Sausage pepper calzone

材料:

意大利甜臘腸, sweet sausage
幹辣椒抹, 小茴香,
甜洋蔥, 紅甜椒, 蒜, 切絲,
白磨菇,切片,
鹽,胡椒調味
奶酪, yellow cheddar and aged cheddar cheese

Pizza dough made by bread machine:

麵包機發麵材料如下: (發好的麵團分成四份)

1 cup water, warm
3 tablespoons olive oil
3 cups Bread Flour
2 teaspoons salt
2 teaspoons active dry yeast

Place all of the ingredients into the pan of your bread machine. Select course for Dough and press Start. 我的麵包機是會三次rise.

做法:

餡:
1, 臘腸切片, 炒出油, 加幹辣椒抹, 小茴香, 炒金黃,備用.
2, 為了省時間同時用了另個鍋, 用橄欖油炒洋蔥, 紅甜椒, 蒜, 炒軟,取出,
3, 加橄欖油, 炒白磨菇,炒金黃, 加入 1 & 2,拌勻, 加鹽,胡椒調味.


用麵皮包好餡和奶酪, 刷點橄欖油, 烤箱連石板一起預熱450F, 烤10分鍾, 再減低溫度到400F再烤10分鍾, 就好了.

阿椿好,pizze stone 是個好DD, 它可以烤麵包時吸收水分,麵包會很脆, 有的麵包烤完後,你敲它會有空空的聲音,就是水隻分沒了,像烤法國麵包就要這樣,我用它來墊鍋子也是讓鍋底收熱,不隻是有四周的熱氣而已,有點像是在爐子上小火在燒,幫助菜收汁,菜的水份也會減少.就是會減少時間的好辦法.喜歡跟你交流經念.
還有,它跟鐵板不同,它的毛空大,像砂鍋的原理, 幫助水份散發,如果你烤要求濕潤的點心就不要把它留在烤箱裏,會使點心發幹的.
