俺的近日養家糊口業績-

百合炒蝦-

蝦仁用鹽水泡過,擠幹水分,用蛋清,鹽, 酒和澱粉抓過, 油鍋炒香薑末,蔥花白, 下蝦, 炒斷生, 加入洗淨的鮮百合, 翻炒, 加鹽, 胡椒粉, 糖, 香油, 蔥花, 苟芑, 拌勻,就出鍋.

酸菜麻辣豆腐-

買了一瓶酸菜麻辣火鍋底料, 做了這個豆腐,挺好吃的.

油鍋炒香蒜, 薑, 蔥末, 加豆鼓, 酸菜麻辣火鍋底料, 炒香, 加牛肉末炒幹, 加酒,炒幹, 加耗油炒, 加雞湯燒滾, 加入豆腐,糖, 胡椒粉, 蓋蓋燒入味, 勾欠, 淋麻油, 灑上麻辣粉,拌勻,起鍋.

麻婆豆腐- 這是傳統的做法

椒鹽烤小排骨-
排骨用椒鹽粉抹遍, Ziploc袋冰箱裏過夜, 第二天拿出來, 室溫後,噴上橄欖油, 進375F烤箱,烤1小時. 外酥裏嫩,好吃極啦.

糖醋黃瓜-

小黃瓜切片後用鹽醃四小時,倒掉水, 用白醋和糖(1:1), 醃過夜, 吃起來是非常的脆.

沙茶牛肉-

法蘭克牛肉切片, 用酒, 蛋清, 醬油,抓揉, 加太白粉再抓勻, 醃十分鍾, 進油鍋前加一點油拌勻,

熱鍋加一點油,下牛肉炒斷生,取出, 備用.

熱油鍋下蒜末炒香, 加兩大勺牛頭牌沙茶醬, 炒香, 加芹菜絲, 胡蘿卜絲, 略炒, 牛肉回鍋, 加一點糖, 胡椒粉, 蔥段, 拌炒勻, 淋一點麻油, 起鍋.

牛肉很嫩,好吃.

牛肉炒辣椒-

法蘭克牛肉切片, 用酒, 蛋清, 醬油,抓揉, 加太白粉再抓勻, 醃十分鍾, 進油鍋前加一點油拌勻,

熱鍋加一點油,下牛肉炒斷生,取出, 備用

熱鍋加油,炒香蒜,薑末, 蒜茸豆鼓辣椒醬, 加辣椒炒軟, 加牛肉,耗油,炒勻,起鍋.

燉白菜-

五花肉切薄片跟蝦米一起用油煸炒香, 加蒜片,炒香, 加白菜, 磨菇,胡蘿卜, 腐皮, 雞湯, 一起燉爛,加胡椒粉,糖, 勾欠, 上桌.

烤雞腿-

雞腿用照燒醬醃入味, 用400F烤箱烤30分鍾.

麻辣豬耳-

豬耳用鹵汁鹵熟後切絲, 拌香菜,自製麻辣醬.

豆芽炒香菜- 自己發的綠豆芽, 太好吃了, 用蒸鍋發的, 三天就能吃了,好嫩.

用薑末熗鍋, 下豆芽,翻幾下,加鹽,糖, 加香菜.

先做Sambal Belachen, 我沒有紅蔥頭就用甜洋蔥和蒜來代替. 這個醬真好吃, 孩子們把它當ketchup來吃.

梅菜蒸肉餅-

廣式的甜梅菜, 洗淨剁碎, 不要浸泡久, 味道會失掉, 反複地換水洗就好了.

豬後腿肉, 攪碎, 用酒, 香油, 耗油, 胡椒粉, 雞蛋, 澱粉, 蒜泥, 打上勁後,加梅菜拌勻, 肉跟梅菜的比例是 2:1, 上蒸鍋蒸半小時.

雞絲炒絲瓜-

雞脯肉切絲用鹽,酒,蛋清,澱粉抓醃, 熱油鍋炒斷生, 取出,
油鍋炒香薑末, 蔥花, 加絲瓜絲炒軟, 回鍋雞絲, 加一點鹽,糖,胡椒, 拌炒勻,勾欠,淋麻油, 起鍋.

燉雞湯- 近來發現韓國店的雞特好吃, 新鮮的,比一般的雞要小很多,但比Cornish hen要大. 燉得湯很象以前在國內吃的味道.

幹炒牛河-

法蘭克牛肉切片, 用酒, 蛋清, 醬油,抓揉, 加太白粉再抓勻, 醃十分鍾, 進油鍋前加一點油拌勻,

熱鍋加一點油,下牛肉炒斷生,取出, 備用

油鍋炒香蒜末, 蔥白末, 下泡軟的米粉, 炒香, 加老抽,生抽,酒, 胡椒, 耗油, 加牛肉, 豆芽, 護蘿卜絲, 甜洋蔥絲, 青蔥段, 翻炒勻,淋麻油.

綠豆糕-

去皮綠豆 1 杯,
水6杯,
糖 1 杯,
洋菜 ¼把, 或吉立粉2TB

去皮綠豆 用水燒開, 燉爛, 加糖, 洋菜, 煮化, 倒入blender,打成泥, 倒入方盤裏, 冰箱冷卻, 切塊. 很間單, 很好吃.

涼拌意麵-

罐頭雞脯肉, 午餐肉(Spam), Feta cheese, 黃瓜, 番茄, 甜洋蔥, olive, 黑胡椒,檸檬汁,橄欖油, 鹽, Parsley.

清蒸螃蟹 –

買回來刷幹淨, 用冰水鎮一下, 背朝下放進蒸鍋, 15分鍾就可吃了,用醋,糖,薑泥,麻油調個醬.

胡蘿卜蛋糕- William-Sonoma 的方子,

Cake: 1) Sift and combine the following dry ingredients in a bowl: 2 cup cake flour 2 tsp baking powder 2 tsp baking soda 1 tsp salt 1 tsp ground cinnamon ¼ tsp ground mace

2) Mix the following wet ingredients in a large bowl: 1 ½ c of sugar 4 large eggs 1 ¼ c of canola oil zest of 1 orange add 4 large carrots, peeled and grated, about 3 cups or 1 LB

3) fold in the dry ingredients into the wet ingredients until fully incorporated

4) Stir in the following: ½ cup of raisins, plumped in hot water and drained 1 cup of walnuts toasted and chopped, I used almond toasted nuts

Butter and flour two 10” cake pans, pour the batter into the pans and bake in pre-heated 350F oven for 35-40 minutes, toothpick inserted into the center and comes out clean.

Cool on in the pan on a wire rack for 15 minutes, invert them out on the rack and let them cool completely.

Frosting: ½ cup unsalted butter, at room temperature 1 LB cream cheese, at room temperature 10 oz white chocolate, melted Juice of an orange 2 tsp vanilla essence, clear color use zest of an orange for final garnishing

Use a hand mixer to cream the butter and cream cheese, then add the rest and mix well.

I used toasted sliced of almonds to cover the frosting since I am not good at decorating the cake. 非常好吃.

The cake is so moist. The frosting is so good; it is made of cream cheese, melted white chocolate, butter, fresh orange juice, lemon zest.
