材料:
牛腩, 胡蘿卜, 白蘿卜, 青蒜苗, 紅辣椒, 蔥, 薑, 八角,
調味料:
辣豆瓣醬2TB, 甜麵醬2TB, 胡椒粉, 酒, 醬油, 糖, 高湯, 水澱粉,
牛腩川水, 切塊 (川過水好切)
鍋中熱油放紅辣椒, 蔥, 薑, 八角, 炒香, 加辣豆瓣醬, 甜麵醬再炒香, 加牛腩,高湯, 糖, 醬,酒, 胡椒粉,大火燒開,改小火燉爛牛腩, 約1.5小時 (用高壓鍋也行), 加胡蘿卜, 白蘿卜燒軟, 勾薄欠, 撒青蒜, 起鍋.

調味料:
醬油, 糖, 酒, 胡椒粉, 水.
排骨用醬油,酒,胡椒粉醃半小時, 進油鍋爆炒幹, 加薑, 豆鼓再炒勻, 加 糖, 水, 蓋蓋燜煮入味, 加辣青椒, 甜紅椒 燒軟, 勾薄欠, 加蒜苗.
