摩洛哥牛肉煲- Beef tagine with couscous
好久沒換花樣了, 今天來點新東西, 真的很好吃的味道, 肉是入口既化, 味有點酸,甜,辣, 香, 醇厚.
碎米飯也特別有味道, 兩種果仁都別有一番風味.
2.5 LB beef cut into chunks
Mix beef with the following dry spices:
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cayenne pepper
½ tsp ground allspice
¼ tsp ground cloves
2 tb olive oil
1 onion, chopped
4 cloves garlic, crushed
zest and juice from 2 lemons
2 tb honey
1 cup prune juice
salt and black pepper to taste
heat a heavy-based clay casserole with oil, add onion and garlic until soft, add beef and cook until it is brown, add lemon zest, lemon juice, honey, prune juice, bring to a boil. Transfer to a 325F pre-heated oven and bake for 2 hours until the meat is tender.
Couscous—
2.5 cup water
8 oz couscous
2 tb olive oil
1 onion, chopped
1 tsp ground cinnamon
½ tsp ground allspice
1 tsp ground turmeric
1 TB ground cumin
1 tsp ground coriander
1 tsp dried mint
1/3 cup pine nuts
1/3 cup pistachio nuts
boil water in a sauce pan, add couscous and cover and let stand for 10 minutes.
In a small casserole pan, sauté onion with oil until soft, add all ingredients and stir and cook for 3 minutes, add couscous and mix well.
Steamed veggies.
