什錦飯（Jambalaya）是一種用大米和蝦和牡蠣、火腿或雞肉烹製而成並用調味品和香料調味的美國路易斯安那州克裏奧爾食品，源自於西班牙大鍋飯。
西班牙移民把家鄉美味的海鮮飯帶到美國路易斯安那州。由於缺少一種名貴的特殊香料藏紅花，用了一些中美洲當地的一些香料（Cajun seasoning）來做替代，變就了美國特有的濃鬱味道的什錦飯。
