《上海的早晨2》 上海油登子、薺菜大餛飩

今幾天上了個《上海的早晨、粢飯糕、蔥油拌麵》,今天再接再厲繼續上二個上海點心,以下做法純屬山塞,請各位老上海多多指教,各位四海朋友指正,不說了,上菜!

白蘿卜一根,蝦米少許、麵粉少許、鹽、蔥,將蘿卜刨絲,加鹽一點略醃、擠幹水份、加入蝦米、蔥花,麵粉加水兌成稀糊待用,模具先入熱油鍋中預熱,拿出模具,快速瀝幹油,放入一勺麵稀糊、再入一層蘿卜絲、再入一層麵稀糊,入油鍋中炸至微黃,倒出模具中的成品再炸2分鍾即成。

薺菜餛飩的做法;絞肉、薺菜、青菜、鹽、雞精、糖、胡椒粉……

由於薺菜成品很幹,為了使餛飩口感鮮滑我加了青菜,比例為一比二,這樣拌出的餡口感鮮滑,另外,打肉漿時要加入薑蔥泡汁,先打肉餡、再加入燙水剁細的二合一菜,即成。

吃了那麽多湯湯水水的,也該來點給力的,下麵給大家介紹一個中西結合的《摩卡肉》,什麽叫《摩卡肉》呢?其實就是改良版的紅燒肉加入了西食的巧克力、咖啡,所以叫做“摩卡肉”,咖啡加巧克力就是算是摩卡啦,哈哈,話雖如此,有機會朋友們不仿一試,一開鍋蓋、滿屋漂香

《摩卡肉》

五花肉一塊,雞蛋幾隻,大蒜粒、香葉、八角、桂皮、五香粉,滴油壺,香菜根、咖啡、巧克力粉、椰糖各少許,先將各塊狀料入碎機打碎,鍋熱加少油、薑蔥蒜炒香再轉小火入打碎的香料粉,煸炒至香倒入切塊的五花肉大火煸炒,再入生抽少許,焦糖,椰糖,去皮熟蛋悶燒1小時即可,出鍋前加入咖啡、巧克力粉略拌,哇……真香,真的好好吃
