素鵝的做法;鮮腐皮一張、八角、蔥、薑、糖、醬油各少許,先將薑蔥八角爆香,入水、醬油、糖,口味鹹鮮,回味帶甜,鹵汁燒開轉小火,腐皮小心入鹵汁中泡一下,折疊成長條待涼,油鍋燒熱,入條型腐皮炸至表皮脆,再放入鹵水中蒸至軟,泡至涼取出,鍋底墊錫紙,放糖、茶葉……上放鐵架,再放入素鵝,薰5分鍾即可
