【活動】-我家的年夜飯
初一給大家拜大年啦!
我家住得近的親戚今年在我家吃年夜飯, 其實是小年夜飯, 初二十九, 因為周六可以呆得晚點.
我做了比較傳統的家鄉菜, 因為我們一半是江西人愛吃辣, 一半是上海人不吃辣, 菜就按辣和不辣來分, 辣也是小辣, 邊上再放一些辣醬給自己加.
冷盤和慢燉的菜是頭一天就開始準備的, 熱炒是客人到時炒的, PP就亂了.
冷盤:
海蟄拌黃瓜 - 不辣
海蟄 冷水洗淨, 開水快速燙過再冷水泡幾個小時. 用麻油, 鹽, 糖, 味精調味.
黃瓜 切絲後用點鹽殺水後, 衝冷水擠幹, 拌
麻油, 鹽, 糖, 味精調味, 墊底.

海帶拌粉絲 – 辣
鮮海帶絲, 和燙過開水的粉絲, 用麻油, 鹽, 糖, 醋, 辣油, 味精調味

素鴨 -不辣
香菇絲, 黑木耳絲, 黃花菜, 用蔥薑炒香, 加醬油, 糖, 紹酒, 鹵入味, 拌入麻油, 包入新鮮腐皮裏, 用油煎金黃, 再用雞湯燒入味, 盛盤, 澆個薄欠.
是當晚一個不剩的菜.

白鹵鹽水鴨 -不辣
鴨 用炒熱的花椒, 鹽,抹勻, 醃過夜, 第二天進開水裏, 加薑, 蔥, 幹辣椒, 桂皮, 八角, 花椒, 燒開, 小火燜30分鍾, 關火. 冷卻後切塊裝盤.

紅糟肉 - 不辣
紅糟用處理機打過後就很細滑.
因為是長時間蒸的, 油都出來了, 肉並不油膩, 兒子說是那晚最好吃的菜.

先吊湯: 用火腿, 扁尖, 雞爪, 豬手, 臘鴨腿 - 慢鍋熬湯一夜, 取出材料, 和油,
湯裏, 加筍, 白菜梗, 杏鮑菇, 再慢燉.

還有客人帶來的地道的上海濃油赤醬的紅燒圓蹄, 筍幹燒肉, 糟鹵鳳爪, 蛋糕, 水果……漏拍了.
很開心大家能在一起迎新辭舊, 慶佳節, 看見老一輩個個都身體健康,孩子們一年比一年更懂事, 我們開始學會淡定的麵對一切, 真得很是欣慰.
