烤小雞醸米飯 - Cornish hens with wild rice stuffing, Ratatouille, Cherry Clafoutis


這個晚飯也是做得很滿意, 很成功的, 要跟大家分享一下, 上次做過幾樣醸葫蘆瓜和雞脯, 這個也是大同小異的, 用一般的米飯也行, 用麵包也行.


烤小雞醸米飯 - Cornish hens with wild rice stuffing

野米餡, Wild rice stuffing:

材料:

半杯野米, wild rice
一杯長糙米, brown basmati rice,
三杯雞湯, chicken broth
洋蔥, Onion,切碎,
芹菜, 切碎, Celery,
胡籮卜, 削皮, 切碎, Carrots,
百裏香, 取葉, Thyme,
胡桃仁,切碎, Pecan,
蔓莓幹, dried Cranberries,
鹽,胡椒, Salt & pepper,

做法:

- 用雞湯跟米煮熟, 用電鍋糙米擋,
- 用橄欖油炒軟 洋蔥, 芹菜, 胡籮卜, 拌入百裏香, 胡桃仁, 蔓莓幹, 鹽, 胡椒, 和米飯.

- 小雞清理幹淨, 裏外擦幹, 抹鹽, 胡椒, 和 meat/poultry grill seasonings, 醃 1 小時, 填入米餡, 外麵刷上橄欖油, 進 400F 烤箱roast 45-50 分鍾.

多出的餡放盤裏加點雞湯, 蓋好, 進微波爐加熱就好了.

烤蔬菜雜燴, Ratatouille – 很好吃, 兒子第二天還問我有剩的嗎, 真是太陽從西邊出,平時最不愛吃剩菜和蔬菜的人. 不過這個菜吃剩的還真的更好吃呢.


材料:

茄子, Eggplant, 切片,
胡蘆瓜, zucchini, 切片
番茄, tomatoes, 切片, 還加了一罐14.5 oz diced tomatoes
洋蔥, onion, 切絲,
烤紅椒, Roasted red bell peppers, 切絲
日曬番茄幹絲, Sun dried tomatoes packed in olive oil, 這個放得很好.
百裏香, 取葉, Fresh thyme,
初榨橄欖油, EV Olive oil
鹽,胡椒, Salt & pepper


做法:

把材料分層放入烤盤, 進375F烤箱, 烤40分種, 中間要翻動2次,

法式櫻桃烤布丁, Cherry Clafoutis – 很簡單很好吃的甜點, 少放點糖的話可當早餐吃.

材料和做法:

3 cup (1LB) thawed frozen pitted cherries, 解凍的櫻桃
2TB butter for coating the baking dish, 黃油用來抹在烤盤上,

打勻著兩樣:
1 cup sugar, 糖,
4 eggs, 蛋,

加入:
1 ¾ cup half & half, 半奶油,
2 tsp vanilla extract, 香草精,

篩入:
1 cup AP flour, 麵粉,
1tsp baking powder, 泡打粉,
Pinch of salt, 鹽,

拌入:
Grated zest of 1 lemon, 檸檬皮屑,


烤盤抹上黃油倒入櫻桃, 把其他材料和勻倒入烤盤,進400F烤30-35分鍾.


成品灑上:
Confectioners’ sugar for dusting
