再做越南春卷 –

上次跟ROLL學做了這個春卷, 一家人吃得好開心, 但沒再自己做過, 主要是不愛用油炸東西, 去越南餐館總會點它, 可是就是不是那麽理想, 還是自己來再做一次.

果然就是絕對不同的享受, 再次謝謝ROLL, 好久不見ROLL, 想念你, 新年裏祝你萬事順心!

這次有點變化, 偷懶, 用了春卷皮, 米紙比較費時間, 炸起來技術要求也高,

這個春卷皮牌子絕對推薦, 要先一張張分開來,用濕毛巾蓋好,再包, 用點麵粉和水調個糊糊來封口.



餡料:

1.5 LB瘦豬肉末, 1 LB罐頭蟹肉, 2杯泡過的黑木耳絲, 2把泡軟的粉絲, 1杯熟筍絲, 2雞蛋, 1根胡蘿卜絲, 1/4洋蔥末, 4根青蔥碎,

調味料:
1/4杯魚露, 1TB 美極醬油, 1/2TB胡椒

配料:

甜酸紅白蘿卜絲: 白糖, 白米醋, 水各一杯泡一小時以上.

各種香葉: lemon basil, holy basil, mint leaves, cilantro…. 都行.

生菜.

沾汁: 魚露, 蒜泥, 紅辣椒泥, 檸檬汁, 糖, 水.

ycy101, I just added another larger picture, I hope you can see it now. It is from "Spring Home" "第一家". It's the best I have used so far, very easy to handle, eggrolls come out flaky and crisp.
