簡單的年夜飯 –祝大家虎年吉祥如意!

簡單的年夜飯 –

過中國年還是來私房後感受到的氣氛, 今年人又更少, 就做幾個菜意思一下, 說是要全魚, 全雞, 全…, 還要有圓子代表團團圓圓, 咱來幾個代表吧.

白斬雞:

材料: 龍崗雞4LB, 進入加有薑塊和蔥段的開水煮15分鍾, 關火燜10分鍾, 取出, 蓋保鮮膜, 冷後切塊裝盤,

沾醬: 蔥, 薑, 鹽, 味精, 熱油.

清蒸龍利魚:

材料: 龍利魚 (rex sole) 2.5LB, 盤底墊蔥段, 放上魚, 再放薑片, 開水上籠, 中火蒸 10分鍾, 關火, 燜 5分鍾, 取出, 倒掉盤裏水, 灑蔥絲, 紅辣椒絲, 澆熱油, 淋蒸魚露.

燴什錦:

材料: 香菇, 黑木耳, 金針菜, 白蘿卜, 胡蘿卜, 鵪鶉蛋, 小玉米, 冬筍, 油麵筋, 腐竹結, 紅棗, 青江菜梗, 魚餅,

調味料: 油, 糖, 醬油, 紹酒, 白胡椒, 素耗油, 麻油.

三色彩球:

材料: 肉丸, 魚丸, 胡蘿卜丸, 芥蘭,

調味料: 油, 雞湯, 糖, 醬油, 素耗油, 太白粉, 香油.

湯:

材料: 小雞, 豬腳, 墨魚幹, 薑塊,

開水川燙小雞, 豬腳, 加冷水燒開, 慢火燉5小時.

調味: 鹽, 紹酒,

飯後喝湯, 忘了拍成品圖了.

Candela 回複 悄悄話 蛋餃的樣子太可怕了。火太大了。個頭也太大了。我用不鏽鋼湯勺做蛋餃,比鍋輕,大小正好。
