腰果雞丁,糖醋藕片,山楂燉肉,紅糟燒肉,麻辣鹵雞爪,排骨燉蘿卜,麻辣哨子酸缸豆,等

麻辣鹵雞爪 – 很解讒的

用我的老鹵汁(我常做的,以前貼過好多次,就不重複啦), 加一把花椒, 半把幹辣椒, 燒滾, 放入汆燙過的雞爪, 鹵半小時, 關火燜泡至涼, 取出.

雞片炒秋葵-

雞裏脊肉切片, 用米酒, 鹽, 蛋清, 白胡椒, 澱粉,馬味10分鍾.
炒鍋燒熱加油, 下雞片滑斷生取出,備用,
熱油鍋炒香蔥白,薑,蒜末,下紅甜椒, 秋葵, 一點鹽, 略炒軟,下雞片, 加酒,一點高湯, 味精, 白胡椒,青蔥段, 拌炒勻, 勾芡,點香油,出鍋.

蒜炒青菜- 還是貼一下, 不然好像我家不吃蔬菜.

秋葵肉末蒸蛋-

秋葵切小段, 肉末, 蛋, 鹽, 酒, 白胡椒, 雞湯, 糖, 蔥花, 一起打勻, 倒入噴過油的容器, 蒸熟, 淋點麻油, 蔥花,就好了.

紅糟鹵豬蹄-

豬蹄開水汆過, 用我的老鹵汁, 加紅糟, 冰糖鹵爛, 最後澆上滾燙的蔥油, 吃時用筷子夾開, 拌蔥油吃,

雞片炒酸菜-

雞裏脊肉切片, 用米酒, 鹽, 蛋清, 白胡椒, 澱粉,馬味10分鍾.
炒鍋燒熱加油, 下雞片滑斷生取出,備用,
熱油鍋炒香蔥白,薑,蒜末,下酸菜炒, 再下紅甜椒,和青辣椒(Jalapeño), 略炒軟,下雞片, 加酒,一點高湯, 味精, 白胡椒, 醬油膏, 拌炒勻, 勾芡,點香油,出鍋.

海帶豆腐蛤蜊湯 –

雞湯燒開, 下海帶, 豆腐, 再燒開, 下蛤蜊, 燒開口,就好了, 撒蔥花, 白胡椒.

排骨燉蘿卜-

排骨開水汆過, 加鹵汁, 蔥, 薑片, 酒, 燉得快爛, 加白蘿卜再燉爛, 就好了.

腰果雞丁-

雞腿肉切大丁, 用紹酒, 醬油, 白胡椒, 澱粉, 馬味20分鍾.
炒鍋燒熱加油, 下雞丁滑炒斷生取出,備用,
腰果用小烤箱烤香熟,
熱油鍋炒香 薑片,蒜片, 下甜洋蔥, 紅甜椒,和青辣椒(Jalapeño), 略炒軟,下雞丁, 翻炒勻, 加調味汁(酒,一點高湯, 味精, 白胡椒, 醬油膏, 香醋, 糖, 澱粉) 拌炒勻, 勾芡, 拌入腰果, 點香油,出鍋.

麻辣哨子酸缸豆-
炒香肉末, 加幹辣椒段, 薑蒜末炒香, 炒幹, 下酸缸豆, 還有我做的四川泡白蘿卜和胡蘿卜丁, 炒幹, 加酒, 醬油, 白胡椒, 花椒油, 就好了.

蔥薑蝦-

帶殼蝦用鹽水加檸檬汁浸泡過瀝幹,
炒鍋燒熱加油炒香蔥段, 薑絲, 下蝦, 加Yoshida醬拌炒熟, 起鍋.

糖醋藕片-

藕切片用鹽水加檸檬汁浸泡過瀝幹,
炒鍋燒熱加油炒香蔥白末, 薑絲, 下藕片, 加調味汁 (酒, 味精, 鹽, 米醋, 糖) 拌炒熟, 撒蔥花, 白胡椒, 香油, 起鍋.

麻辣螺絲-

韓國店買的螺絲肉, 用鹽撮洗4-5偏, 再用堿水泡過瀝幹, 當時後悔不該搞它, 太麻煩了, 後來吃的時候覺得挺值的, 挺解讒的,

用大量的蔥薑蒜和辣椒炒, 噴酒, 再用火鍋的麻辣底料調味,

五花肉, 用老鹵汁, 加紅糟, 冰糖鹵爛.

山楂燉肉- 簡單好吃的做法.

五花肉用薑蔥, yoshida醬醃過夜後, 倒入砂鍋, 加山楂, 紹酒,冰糖, 燒爛, 就好了.

鹵雞-

也是用我的老鹵, 燒開後放入雞, 再燒滾, 慢火煒15分鍾,關火, 浸泡至涼取出.

兒子的樂隊去迪斯尼表演, 就我們老倆口子吃飯, LG說他來下廚, 就蒸了螃蟹. 別的什麽都沒吃. 可想而知,今後孩子們都走了,我們的日子會怎樣過的.

我的中國菜刀- 那天看了mychina 的刀貼, 加上小.蝌蚪亮出他家的寶刀, 忍不住就在amazon下單買了三把刀. 好跟朋友分享. 有一把是小點的, 我怕我不適應大的, 想先試試它, 真的很快, 但是我的手起了兩個泡了, 我要多練習它.
