對不起, 又忙了一陣, 好不容易整理出這個貼, 希望大家喜歡.


法式燉牛肉晚餐 - Beef Provencale, French Bread, Crepes


材料:

Beef Chuck roast, 牛肉, 4+ LB , 切方塊,

醃肉料:
Thyme, 百裏香
Rosemary, 迷迭香,
Parsley, 巴西利
Onion, 洋蔥,
Oil, 菜油,
Red wine, 紅酒,

Bacon fat, 培根熬的油,
Onion,洋蔥, 切碎,
Carrots, 胡蘿卜,刨皮, 切段,
西芹, 切碎,
Garlic, 切碎,
醃黑橄欖, Kalamata olives
番茄, tomato,
香葉,Bay leaves
雞湯,一罐
鹽, 黑胡椒,
巴西利, Parsley 切碎,

做法:


- 牛肉用醃肉料醃過夜, 瀝幹,

- 加熱可進烤箱的重鐵鍋 , 倒入培根慢慢熬出油, 取出, 留油, 分兩批放入牛肉, 煎金黃, 取出,

- 放洋蔥, 大蒜, 炒軟, 加西芹炒軟, 加番茄,牛肉, 拌炒勻,

- 倒入醃過肉的酒, 加雞湯, 把鍋底的焦渣刮鬆, 加香葉, 燒滾, 蓋蓋,

- 進300F烤箱底層烤一小時, 加入胡蘿卜, 黑橄欖, 蓋蓋, 再燉烤一小時, 到肉爛.

- 烤箱取出放爐頭上,開火, 同時取出Bay leaves, Thyme 梗, 和撇掉油, 再拌入鹽, 黑胡椒, 開蓋, 大火收汁,

- 吃前拌入 parsley, 好了.

配菜:

奶油烤西蘭花 -

奶油炒香麵粉, 加牛奶和奶酪, 鹽, 大量的黑胡椒, 溶化後澆在開水川過的西蘭花上, 進400F烤箱, 烤15-20分鍾,

土豆泥-

紅皮土豆用冷水煮熟後瀝幹水, 加牛奶, 奶油, 鹽, 黑胡椒, 酸奶油, 拌勻.

法國麵包-

肥引子(sponge starter):

1 cup water
1/2 teaspoon yeast
1 1/2 cups Bread Flour

麵包料:

All of the sponge starter
1 cup water,
3/4 teaspoon yeast
1 tablespoon sugar
3 3/4 cups Bread Flour
1 teaspoons salt

先用麵包機做肥引子, 留在機器裏, 室內過一天一夜, 24小時, 再加入麵包料, 接著用麵包機再揉麵和發麵, 取出, 排汽, 揉成團, 放入抹了油的盆裏, 保鮮膜蓋好再發酵,

整型, 再醒40-50 分鍾, 用快刀畫刀口, 麵包表麵噴水,

預熱烤箱 475F, 放麵包進烤箱, 馬上改到 425F, 15分鍾內對烤箱噴三次水, 烤30分種, 敲敲有空空的響聲就好了.

甜點- crepe

2 杯全脂牛奶, 1 ½ 杯麵粉, 兩個雞蛋, 1 大勺白 糖, 1 小勺香草精,

用blender 打勻, 進冰箱放一小時以上.

熱鍋, 薄薄的擦點奶油, 倒入2-3勺的漿, 用木棍轉推開麵漿, 薄薄的一層, 等麵上略起泡, 用平鏟挑起翻麵, 幾秒種就好了, 對疊兩次, 放盤裏, 加奶油紅糖煮水果, 和橙味酒香糖漿, 配點冰期淋吃,

奶油紅糖水果 -

奶油紅糖煎的香蕉和萍果,

橙味酒香糖漿 –

燒煮奶油, 白糖, 檸檬皮, 新鮮擠的橙汁和檸檬汁, 最後加一點橙味酒,
