魚香味肉絲,陳皮炒牛肉,小雞燉淡菜紅棗湯,百合炒蝦仁,龍蝦粉絲煲,台式鹵肉,泡椒肉末燒長豇豆

上一些我家每日飯桌上的菜吧, 大部分菜一看就知道怎麽做的,我就不囉嗦了, 菜名我也是瞎扣上去的, 談不上地道, 望大家多多指教.


用來炒菜的肉, 我從Costco 買來牛肉,豬肉分成小包,再放大包, 標記一下進凍箱,早上拿一包放到冷藏箱解凍, 晚上就可以用了. 不要完全解凍, 還好切.

牛肉我以前是用flank steak, 雖然很嫩, 但覺得會碎散,肉片炒出來不完整, 近來愛用tri-tip roast, 肉很嫩, 但不肥, 不容易散, 肉片很漂亮, 要逆紋切, 切大片, 孩子們叫它們 mini-steak.

豬肉我也愛用小裏肌肉, 很嫩, 味道也很好. 也是切成小段, 用來調味配菜就用一包, 用來做主菜就用兩包.

肉上漿的時候, 多捏幾下, 肉會更 滑嫩.

魚香味肉絲

材料:

- 肉絲: 紹酒,生粉,鹽,胡椒, 蛋清, 給肉絲上漿, 入鍋前加點油拌散,

- 水發木耳切絲,冰凍筍切絲

- 蔥,薑,蒜,泡椒,泡薑, 切碎,

調汁: 醬油,糖,陳醋,(這三樣是1:1:1 的量), 鹽, 酒, 胡椒, 雞粉, 澱粉,(這些就每樣少許)混在一起調勻


1:油鍋燒5成熱後滑炒肉絲,變色後撈出

2:鍋洗幹淨後,燒熱, 倒油,放入蔥白,薑, 蒜,泡椒,泡薑, 煸炒,放入木耳,筍絲,炒一會後,放入肉絲,快速翻炒後,倒入調汁, 灑青蔥, 淋香油, 快速翻炒, 出鍋,淋紅油 (我淋在盤邊上好看而已).

陳皮炒牛肉

材料 :

- 牛肉切片, 紹酒,生粉,鹽,胡椒, 蛋清, 給肉片上漿, 擱半小時, 入鍋前加點油拌散.

- 蒜,薑,切末,

- 幹辣椒切段, 八角,桂葉,陳皮切絲,花椒,蔥段, 紅甜椒切絲,

調汁: 米酒 (沒有酒釀),醬油,糖, 味精, 胡椒粉, 香醋, 高湯, 澱粉,

做法 :

- 炒鍋油燒至7分熱,放牛肉片下鍋炒斷生, ( 正統是熱油炸過), 撈出

- 鍋裏留油一大匙燒熱,放陳皮,幹辣椒,花椒, 八角,桂葉,炒香,加薑,蒜, 爆香,加紅甜椒, 炒軟, 加牛肉片,到入調味料燒至滾,燒至湯汁收幹, 加青蔥段, 淋麻油拌勻, 即可。

台式鹵肉-

五花肉切小丁,進熱炒鍋, 慢火煸炒出油,加蒜頭,薑片,八角,油蔥酥, 冰糖炒香, 加米酒, 五香粉, 醬油, 水, 煮滾,到入砂鍋燉爛.

龍蝦粉絲煲-

龍蝦切塊用米酒, 鹽, 白胡椒, 澱粉醃10分鍾,

熱鍋下油炒香蔥白, 薑, 蒜 末, 放龍蝦炒變色, 加酒, 金蘭蒸魚露, 糖, 高湯, 蓋蓋燜煮5分鍾, 加泡過的粉絲 和青蔥, 略燒一下, 加胡椒粉,淋麻油, 起鍋.

泡椒雞翅-

雞翅切小段, 倒進放少量油的熱鍋煸炒至雞皮略焦黃, 下 蒜片, 泡椒, 泡薑, 炒幹, 加酒, 鹽, 胡椒, 糖, 味精, 雞湯, 燜煮, 收幹, 既可.

孜然茴香炒雞片-

雞腿肉切片, 用孜然粉, 茴香粉, 辣椒粉, 胡椒粉, 鹽, 酒, 澱粉, 醃10分鍾,

熱鍋放少量油炒雞片,斷生取出,

鍋裏加,蒜, 薑末炒香, 加合掌瓜片, 紅椒片炒軟, 加雞肉, 噴酒, 下鹽,糖, 胡椒,雞粉, 拌炒勻, 好了.

冬菜洗幹淨擠幹水, 加韭菜碎, 蛋, 鹽, 酒, 糖, 胡椒粉, 味精, 拌勻, 倒入熱鍋, 兩麵煎熟.

家常豆腐-

調味料: 耗油2TB, 醬油2TB, 糖1TB, 胡椒1/2 TSP, 酒1TB, 哈哈辣豆瓣醬1TB, 雞湯 1罐,

豆腐(2合)切半寸厚塊, 用廚用紙巾吸幹水, 進熱油鍋,兩麵煎金黃,取出.

熱鍋炒香, 蔥,薑,蒜末, 加肉末炒幹, 加豆腐, 胡蘿卜片, 調味料燜煮透, 加西葫蘆片, 草菇, 拌炒, 收幹水, 加澱粉水勾欠,

黴幹菜蒸小排骨-

黴菜排骨,我是先用薑,八角, 冰糖爆炒焦香排骨,加紹酒,醬油, 燒幹後放碗裏, 黴菜也是用油,糖,醬油炒幹水氣後蓋在排骨上,蒸1小時,這樣的排骨不柴, 黴菜也很滑口,

黃燜田雞腿 -

田雞腿用酒,醬油醃5分鍾後,瀝幹, 拍點澱粉進不粘鍋煎金黃,(應該是油炸過的,會更好),

鍋裏用油煸炒香薑片,蔥段,八角,幹辣椒, 加醬油,糖, 雞湯, 燒滾, 燒出味, 放田雞, 蓋蓋燜煮5分鍾, 把渣料取出,收汁,就好了.

番茄麵筋炒包菜 -

補:

我看到羅宋湯裏的包菜跟番茄很配, 家裏院裏隻結了倆個番茄, 就把它們炒在一起,結果還真好吃, 我放了一個麵筋花生罐頭調鮮,

用蒜頭熗鍋, 我用純橄欖油(但不是初榨的), 下包菜略幹炒一下, 加罐頭進去, 蓋蓋煮兩三分鍾包菜軟了, 加番茄,一點鹽,一點糖, 胡椒, 翻炒勻,就好了.

值得一試.

醬油膏就是一種加工過的醬油, 有點糖和澱粉, 跟素耗油有點類似, 英文叫 Thick Soy Sauce

我是最笨的貼圖人,我用了那個魔影,裏麵有個工具可以放多張圖.他們很多人用photoshop,很漂亮,哪天我有時間也來學學. 看我圖的左角上有個小字,就是它的軟件,我就每次敲下"auto",因為我家廚房是用燈光,PP很糊塗,我隻是想讓人能看清菜,有食欲,其他美感我就不懂了.
