燉牛肉晚餐 - Beef pot roast dinner


跟兒子一起去Costco買菜, 問他想吃什麽, “beef, but not steak, something hearty”,



材料:

牛肉, beef chuck, 4+ LB ,
麵粉1/3杯,
橄欖油,
洋蔥1個切碎,
芹菜, 2條, 切碎,
胡蘿卜3根,刨皮, 切碎,
紅酒2 杯,
雞湯,3杯,
百裏香,1小拺, Thyme,
紅皮土豆 6個,切塊,
鹽, 黑胡椒,
巴西利, Parsley 切碎,

補加了一勺Worcestershire sauce 和一勺ketchup


2TB黃油, 2TB麵粉 - 拌勻,用來勾欠.



做法:

- 整塊牛肉粘上麵粉, 撣掉多餘的,

- 加熱可進烤箱的重鐵鍋 , 倒入橄欖油, 燒熱, 放入牛肉, 兩麵煎金黃, 取出,

- 放洋蔥, 芹菜, 胡蘿卜, 炒軟, 加百裏香, 炒香,

- 加酒, 雞湯, 把鍋底的焦渣刮鬆, 大火燒滾, 讓酒精揮發, 加牛肉, 加鹽, 黑胡椒, 蓋蓋,

- 進300F烤箱底層烤2小時, 加入土豆, 蓋蓋, 改350F 再燉烤一小時, 到肉爛.

- 烤箱取出, 取出Thyme, 撇掉浮油, 把肉和菜盛在盤裏,

- 鍋裏的湯汁,嚐一下, 加了一勺Worcestershire sauce 和一勺ketchup, 大火收濃, 改小火, 拌入黃油混好的麵粉, whisk, 打勻, 濃稠後倒在菜上,

- 灑上歐芹碎, parsley, 蓋在土豆泥上吃.

甜點 - 輕乳酪蛋糕

今天又做了一次, 這此用了cottage cheese, 做法也改了一點, 很好吃,


材料:

A:
乳酪, cream cheese, 250g
cottage cheese, 300g
50 g cake flour, 低筋粉,
8 egg yolks, 蛋黃,
4 TB melted butter, 溶化的黃油,

B: whisk until soft peak, 1跟2 一起打, 略起泡, 慢慢加入3, 邊加 邊 打, 打到中性發泡,

1 - 8 egg white, 蛋白,
2 - 1 tsp cream of tartar, 塔塔粉
3 - 1 cup sugar, 糖

9”X 3” 圓烤盤 , 脫底的, 噴油, 底和周圍都貼上烤紙, 外麵再包上鋁紙,

烤箱預熱340F, A材料全部用 food processor 打勻, 倒入一大盤, 加入少量打發的蛋白, 拌勻, 再加入其它蛋白, 輕輕拌勻, 倒入烤盤, 放在有水的烤盤上, 水不要太多, 烤2小時, 表麵變黃後, 蓋上鋁紙, 繼續烤, 用竹簽插入取出, 光滑就好了.

烤箱取出後, 放架上冷卻, 15分鍾, 看邊上開始鬆開, 就取出烤盆, 冰箱冷卻後就開吃,

非常好吃, light and fluffy, yet rich and creamy.

回複 悄悄話 姐姐,我一沒事兒就來看你的blog,生活氣息,家庭氛圍,你輕鬆煮菜的風格都是我的最愛~~ 這道菜我一直很想試試看,一直怕卡路裏太高了不敢做。。。。我啥時候能有機會嚐嚐姐姐的手藝呀~
Bali 回複 悄悄話 suezi-q,你這個菜譜我朋友做了請我吃,不錯哦.我做beef stew一般隻用紅酒燉,不加芹菜不用parsley,但是用洋蔥大蒜百裏香胡蘿卜蘑菇,你試試,也很好吃呢,是法式的.

煎黃的肉會很香,就象做中菜也要用油爆炒香才好吃.這個蛋糕是乳酪和戚風的結合,很輕又有奶香味.

Worcestershire sauce西人店有賣,用淡醬油也行,上海的辣醬油最好,你試試這樣燉一次,不要用太瘦的肉.
Bali 回複 悄悄話 這個牛肉料看上去是正宗的Irish Stew,可是為什麽要先烤了牛肉呢? 象愛爾蘭Stew一樣直接煮不是更方便?
這cheese蛋糕用cottage cheese注意不錯哦,比較健康. 看上去有點象sponge cake,是用了麵粉的原因吧? 吃起來是不是象sponge cake呢?

還有,我做的牛肉總是很幹很柴,不知道為什麽?害得我現在隻吃超市賣的Tyson's Beef Tips,微波爐一熱很嫩很軟,味道好極了,就是不會做。我先試試你的方子。非常感謝!
