泰式牛排和幾個其它牛肉晚餐


泰式牛排-

醃料:

6 TB魚露,
2TB 甜醬油,
2TB 辣醬油,
1個檸檬汁,
2TB 菜油,
1 tsp 辣椒粉( cayenne ),
1tsp 胡椒粉,
3 TB糖,
½ tsp鹽,

以下這些香料先切碎再搗爛成泥:

5-6粒蒜,
2 個紅蔥頭,
2根香茅,
5-6 泰檸檬葉,
1個檸檬皮,

3 塊NY Strip牛排一切二成 1”厚, 放進Ziploc bag, 跟以上的醃料醃過夜,

第二天取出後用紙巾擦幹牛排,

厚平底鍋燒很熱, 不加油, 把牛排放入, 一麵煎3-4分鍾, 愛吃medium-rare, 就好了.

蒜油炒飯-

大蒜碾碎進油鍋炒金黃, 加泰國香米飯炒香, 加雞粉, 白胡椒, 鹽, 就好了.

配生菜,黃瓜,

牛排醬: 2TB魚露, 1小勺辣醬油, 1個檸檬汁, 2TB番茄醬, 1個紅蔥頭, 1小勺辣椒粉( sweet smoked paprika )用blender打成醬.

手邊有點現成的調味料很方便, 忙的時候就不一定要從頭開始, 下麵幾個晚餐就利用了買的調味品,也很好吃, 看看包裝上寫的成分, 喜歡裏麵的香料就用.

烤牛肉串-

另兩片NY排就切成小方塊, 把肥的邊切掉, 不然會很硬, 不象整塊牛排可以吃時切掉, 用了兩大勺買的調味粉, 加一點橄欖油, 放進袋裏,用手捏勻, 進冰箱4個小時, 拿出來, 跟甜紅椒, 甜洋蔥, 和用鹽水煮熟的小土豆串在一起, 用外麵的BBQ中火烤10分鍾, 每麵都烤到.

淋點Ranch 沙拉醬, 兒子問這不是酸奶醬, 不要囉嗦, 不好吃就不要吃, 再不敢問這不是羊肉, 結果吃了四根. 近來他猛長個, 馬上要15了, 答應給他做櫻的”壽星”蛋糕.

墨西哥式牛排晚餐-

那天趕完一個活很晚啦,就急忙順路到Costco買了一盤skirt steak,回家就撒上Taco seasoning,進很燙的平底鍋, 煎黃兩麵, 約2-3分鍾一麵, 就好了,
用同鍋不洗下甜椒絲, 甜洋蔥絲, 炒軟,也撒一點, Taco seasoning, 好了,

薄餅放盤裏, 蓋上打濕的紙巾,再蓋個盤子, 進微薄爐, 熱2-3分鍾.

忙的時候吃牛排最省事也最快, 又是一個快晚餐-

Costco 買的Rib eye steak, 灑上Costco的牛排dry rub, 進平底鍋煎, 兩麵焦黃, 5-6分中一麵就好了, 這個牛排很肥, 我就用東西擋住油, 用了Gastrolux 鍋, 無煙,

配個橄欖油炒紫包菜, 意麵拌上買的醬, 就是一餐了.


對了, 牛排出鍋要歇5 分鍾再切, 調料想放什麽都行, 就是有鹽和胡椒就好了,

鍋要很熱, 牛肉要表麵幹燥, 不要水淋淋的, 煎的時候不要動它, 薄的煎的快, 厚的多煎一下, 再厚一點可進烤箱烤一下.

做這樣的快餐, 我一般是把鍋開中火先燒起來, 準備牛排, 牛排煎的時候切菜, 牛排煎好在醒的時候炒菜. 盡量用不要太花時間洗和切的菜.

這樣一頓飯在20分鍾就上桌了. 我可以PK Rachael Ray’s 30-minute meals, 讓小.蝌蚪去PK Morimoto.

剩的牛排切片可用來做沙拉, 或卷在餅裏吃也好, 不怕多做一點.


這不是接連吃的哦, 不然要吃壞身體的.
