帶爬梯菜來給大家拜個晚年! 祝大家牛年萬事如意!

 這段時間不是去親戚,朋友家吃飯, 就是到外麵應付一下, 長了五磅了, 人也懶啦.

 Superbowl Sunday 中午請了幾家朋友來玩,  加上也還是過中國年, 一舉兩得, 大家熱鬧一下,

 因為是中午開飯, 準備時間不多, 我就盡量做一些能提前做好的東西, 吃完後, 大家就可以看球了.

 

零食:

白鹵鴨:

 鴨子先用花椒鹽醃24小時, 冷水洗淨, 再進燒滾的白鹵汁鍋,  慢火煮30分鍾, 熄火燜到水涼, 取出, 冰箱冷卻,切塊.

 白鹵汁是用自做鹵包(八角,小茴香,桂皮, 花椒, 甘草, 草果,陳皮), 加蔥, , , 冰糖, , 熬煮30分鍾,

 自做的烤麩:

 麵筋粉,  2,

, 2,

酵母粉, 2 tsp

 以上倒入麵包機, 開發麵擋, 停機後,進滾水蒸鍋,大火蒸30分鍾, 切塊用.

以下是做的一些吃的帶去朋友家的,

 紅豆年糕 (來自點心菜譜”):  我做了兩倍的量, 有四個9” pie size.

 紅豆, ½ LB, 加水5杯泡軟, 煮爛, 拌入糖 ½ , 略壓爛一部份, 剩下保持原粒,

 拌勻以下材料,  加入紅豆, 拌勻, 倒入容器, 1小時,

 糯米粉, 6 ,

,2,

熱水, 2 ½,

 糯米泡水過夜,  再來蒸糯米飯,

 澆上用桂花糖勾的欠,

Tiramisu –我做了兩倍的量, 一個給自己嚐, 因為第一次做, 很成功.

 3 c strong black coffee, cooled

3 TB Kahlua or brandy

 2 eggs, separated,

3 TB caster (superfine) sugar

250 g (8 oz) mascarpone cheese

1/2 cup whipping cream, whipped or  1 cup whipped cream

16 large lady fingers

2 tsp dark cocoa powder

 beat egg yolk until color turn light, add mascarpone beat more to blend them, fold in whipped cream,

 Beat egg white with sugar until soft peak, fold into egg yolk mixture,

 dip ½ sheet of the sponge cake into coffee brandy liquid mixture, put in a 9X13 baking pan, pour ½ of the cream mixture, line a another ½ of the sponge cake soak with liquid mixture, then, pour the rest of the cream mixture and refrigerate for 4 hours or more, then dust with cocoa powder before serving.

  Lady Finger Cookies – I made it into a thin sponge cake for my Tiramisu.  You can use a piping bag to pipe them into lines to make cookies.

 90 g AP flour

pinch of salt

4 eggs, separated

115 g caster (super fine sugar) sugar

½ tsp vanilla essence (extract)

Icing sugar for sprinkling

 Preheat oven to 300F

 Beat egg white with ½ of the sugar,

 Mix egg yolk with ½ sugar and flour,

 Combine egg white and egg yolk batter; add vanilla, and salt,

 Pour on to a parchment paper lined baking sheet and bake for 20 min, cool on a rack.

  Pecan Pie -我又是做了兩倍的量, 用了一個特別大的13” tart pan, 原方子是9” pie dish.

 Crust:

 1 ½ c plain flour

4 oz butter chopped small

2 TB chilled water

 filling:

6 oz pecans

3 eggs, lightly beaten,

50 g butter, melted and cooled,

¾ c brown sugar,

2/3 c light corn syrup,

1 tsp vanilla essence,

 preheat oven to 350F,

 mix crust ingredients and form a pie shell, blind bake for 20 min, cool,

 line pecans on the bottom of pie crust, mix rest of the filling ingredients pure into pie crust, bake for 45 min.

 臘味糯米飯煲,

 用了臘鴨,臘肉,臘腸,

 4杯糯米泡水30分鍾,

芥蘭,胡蘿卜開水燙熟,

臘鴨,臘肉開水泡10分鍾,

糯米用水煮滾, 放臘鴨,臘肉,臘腸, 改小火燜熟,

取出臘鴨, 臘肉,臘腸切片, 跟菜放回到飯上, 加金蘭醬油膏拌吃.
