熏雞 和 Cranberry-Pistachio Biscotti

熏雞-

- 鹽加花椒,八角, 薑片,炒香,

- 雞腿和雞脯用炒過的鹽, 醃過夜, 洗淨後蒸30分鍾,

- 用一個舊炒菜鍋, 底上脯一張大的錫伯紙, 邊上要多留一點出來, 放入 米,麵粉, 紅糖, 茶葉, 八角, 花椒, 放入抹了油的鐵架, 把雞放在架上, 上麵再蓋上一張大錫伯紙, 要留空間, 做一個tent似的, 不要壓緊, 再把錫紙邊圓卷在一起, 象做派皮似的, 要卷緊, 這樣就不會漏煙出來. 我用的是heavy duty foil, 很寬大的那種.

- 大火燒 25-30分鍾, 關火, 停一會兒, 拿到院外麵, 打開錫紙, 放掉最後的煙, 拿進來, 就好了, 冷後, 刷一點麻油, 切塊裝盤. 最好是冰箱過夜, 會更好, 更香, 我切了一盤當晚吃, 另一盤第二天吃, 更好. 屋裏沒煙.

這是第二天冰過一夜後切的,

火腿燒青豆-

過節剩了好多火腿, 就用來炒菜, 鍋裏放橄欖油, 蒜, 火腿絲, 青豆, 倒入半罐雞湯, 蓋蓋煮10分鍾, 就好了.

做Takoyaki多的材料用平底鑄鐵鍋煎了一塊大餅, 也非常好吃, 如果隻是吃它的味道, 而不是玩的話, 就不用買新鍋了.


看到柴魚刨片在餅上跳動也挺好玩的.

聖誕節要到了, 習慣地做了餅幹給街坊鄰居們送去, 用了Williams-Sonoma 的方子, 又是非常好吃. 這本書很好, 每次都是很成功.

先溶化奶油, 讓它冷卻,

炒熟堅果, 略打碎,

先把幹料和濕料分開拌勻, 再把幹料倒入濕料, 拌勻, 分為兩份, 脯成 10”X3”的長條.

進350F烤箱, 烤25分鍾, 取出晾10分鍾, 用大鏟取出, 切約1”寬, 再進300F烤箱烤25分鍾. 再冷卻, 就好了.
