煎土豆餅,早餐蛋餅,胡蘿卜馬芬,煎魚餅,夾肉餅

周末放鬆了一下,做了幾個費時間的小吃的:

煎土豆餅, Hash Brown

food processor 打碎的土豆絲, 冷水衝過, 一是為了洗掉一點澱粉, 二是顏色不會發黑, 瀝幹後, 撒一點鹽和胡椒, 拌勻,

注: 用紅土豆澱粉可少吃點.

鐵鍋燒熱, 加橄欖油, 倒入土豆, 中火烙到金黃, 邊烙邊把周圍往裏推, 同時壓緊表麵, 翻一麵再烙金黃, 脆香,就取出.

早餐蛋餅, Breakfast Frittata- 以前做過不同料的.

這次有:

蛋, 意大利臘腸去掉腸衣, 磨菇, 紅椒, 甜洋蔥, 青蔥, 芹菜, 奶酪,

不粘平底鍋, 可入烤箱的, 燒熱, 放臘腸, 炒出油, 加洋蔥炒透明, 加磨菇, 紅椒, 青蔥, 芹菜, 炒軟, 撒鹽,胡椒, 倒入打散的蛋, 用鏟略把菜推動讓蛋滲透到底部, 稍定型, 表麵鋪奶酪, 進400烤箱, 大約5分鍾, 表麵金黃,就取出.

胡蘿卜馬芬, Carrot muffin

1) 幹料:

1 ½ C 中筋麵粉,
½ c 玉米麵, corn meal
¼ C 麩皮,
2 tsp baking powder
½ tsp baking soda,
¼ tsp salt
1tsp cinnamon
2/3 c 紅糖,


2) 濕料:

2 蛋,
1 ½ C 酸奶,
¼ butter, 化過,

3) 添料:
2 1/2 c 胡蘿卜碎,
½ c 葡萄幹,


4) 撒在表麵的:
2 TB 白糖,
1 tsp cinnamon


5) 抹醬:

8 oz cream cheese
1 cup lemon honey jelly


做法:

(1) 料放一盤裏拌勻, (2) 料放一大盤攪勻, 加入(1), 拌勻, 加入(3)拌勻, 倒入模裏, 撒上(4), 進400預熱烤箱,烤20分鍾, 竹簽插入取出光滑,就好了. 配上(5)吃.

煎魚餅-

新鮮魚漿一合, 1LB
肉末, 2兩,
蛋, 3個,
太白粉, 2TB
香菜, 1把,切碎,
胡蘿卜,2 根刨絲,
白糖, 1TB
雞粉, 1 tsp
蘇打粉, baking soda, ½ tsp
白胡椒粉, 1tsp,
白醬油, 2TB

以上拌勻, 用鍋兩麵煎黃, 配甜辣醬吃.

學做夾肉餅- 剛電視上看來的.

中筋麵粉, 先加燙水,用筷子拌勻, 再加一點溫水揉幾下, 就讓麵醒20分鍾, 就杆開, 麵要軟麵, 不需死揉, (因為麵軟, 不好杆薄, 還要用刀把麵翻起) , 師傅是這樣教的.

這樣拉四刀,

抹餡, 用肉末, 解凍,切碎的薺菜, 雞蛋, 太白粉, 雞粉, 香油, 鹽, 胡椒拌的.

稍輕壓扁一點,

熱鍋裏抹少量油, 放進餅, 蓋好蓋, 慢火燜煎.

翻麵再燜煎, 兩麵金黃香脆,就好了.
