潑辣魚 & 生滾魚片粥
潑辣魚-

我也不再光火啦, 我想我已經接受過無數次挑戰啦, 好吃是我的成功,失敗是他倒黴得吃它, 嘿嘿..
- 貓魚肉片, 用酒, 白胡椒, 鹽, 蛋清, 澱粉, 薑絲, 抓好, 冰箱待會兒.

- 油鍋小火煸炒香, 蔥段, 薑絲, 花椒

- 雞湯兩罐,再對一杯水, 加一點酒, 鹽, 味精, 一點糖提鮮(不是要吃甜味), 中火燒滾,

- 撈出香料來,

- 這時另起一小鍋到入冷油和幹辣椒,慢火熬香, 變褐紅色,但不要焦,

- 改中小火, 一片一片往裏加魚片, 不要攪動, 略燙一下,魚片變色, 加入泡過冷水瀝幹的粉絲, 一滾就裝大碗, 馬上把熱油熬香的幹辣椒澆上, 開吃.

再來個生滾魚片粥-
用電鍋加米和雞湯, 水, 煮的白粥, 倒入湯鍋裏, 放爐上, 加一點糖, 鹽, 兩個皮蛋切塊, 再燒滾, 加入上麵同樣醃過的魚片, 輕滑散, 關火, 略燜煮, 好了.
碗底放一點切碎的生菜, 勺進滾粥, 撒蔥花,香菜, 白胡椒,吃吧.
