意大利檸檬煎雞排- Chicken Piccata
給大家來個美味,簡單,實惠的意菜,
材料:
6片雞脯肉
大蒜頭, 紅蔥頭, 切碎,
2個檸檬, 一個皮刨下後擠汁, 另一個切薄片,
一杯雞湯,
一杯白酒,
2 TB Caper (酸花蕾)
2TB 黃油,
Parsley, 切碎,

準備三個盤, 一盤放麵粉1/2杯, 一盤放兩個蛋打散, 一盤放有意大利調味料的麵包削1杯,

雞脯肉, 把筋, 油去掉, 把裏脊肉取下(下次做菜用,太厚), 用臘紙隔開, 拍薄, 撒上鹽,胡椒粉,

鍋裏放一點canola 油, 把底部抹勻, 燒熱, 雞脯肉, 粘麵粉, 再裹蛋液, 最後再拍上麵包削, 進熱鍋兩麵煎金黃, 去出, 保溫,

同鍋裏, 加一點黃油, 放大蒜頭, 紅蔥頭,炒軟, 加酒, 把鍋底刮幹淨, 加雞湯, 1半的檸檬片和檸檬皮, 慢火收汁到隻剩一半, 取出檸檬片和檸檬皮不要, 加檸檬汁, caper, 加熱後關火, 加黃油攪拌溶化, 再加parsley, 把醬倒在雞排上, 把剩的一半檸檬片放在雞上, 好了.

盤底放上 arugula 和 紅洋蔥絲, 再放雞塊, 澆上醬汁, 圍上番茄, 再配個parsley拌的土豆泥, 就是一餐了. Arugula 也粘上醬汁, 又讓熱雞溫了一下,特好吃.
我們家一般是小孩喝牛奶, 大人喝紅酒, 也不是什麽高級酒, 也不董酒, 覺得順口就好, 當健康飲料喝, 稍微增加一點氣紛, 今天開了白酒, 就喝白酒, 這瓶酒還挺順的, 不錯.
