意大利辣腸烤麵- Spicy sausage lasagna:
我家很愛吃這個意大利麵醬做的各式意麵, 有時會小改動一下, 看手上有哪些材料而定. 這次做成烤麵片, 很好吃.
For sauce:
2 TB olive oil
2 LB spicy Italian sausage (I used 7 links, from Costco), remove the casing
1 tsp of hot pepper flake
1tsp dried oregano
1 tsp black pepper
1 tsp fennel seeds (小茴香)
1 onion chopped
4-5 clove of garlic minced
½ cup of red wine
1 can of black olives chopped
1 can of tomato paste
1 can of tomato sauce
1 TB sugar
½ tsp salt or omit it
Lasagna noodles 9 sheets (I used no boil kind)
8 oz shredded mozzarella cheese
½ cup of grated parmesan cheese
2 cup of quark – (濃酸奶), you can use ricotta cheese
我把自做的酸奶瀝掉水份就是了. 這個濃酸奶還可用來做別的, 象點心類, 印度菜等. 可以代替cream cheese, sour cream, 等.
做醬:
用olive oil炒辣腸,炒金黃, 把多餘的油到掉, 加幹香料, (pepper flake, dried oregano, black pepper, fennel seeds) , 炒香, 加洋蔥炒軟,加蒜,炒香,加紅酒, black olives, tomato paste, tomato sauce, sugar. 小火燜 30 分鍾.
組裝麵:
放一些醬在 9”x13” 烤盤底麵, 抹平, 鋪三張麵片, 加一層醬, 一層mozzarella cheese, 和酸奶, 再鋪一層麵片3張,加 sauce, mozzarella, quark.再一層, 最後灑上parm cheese. 進 350F 烤箱烤 35 分鍾.
做了個沙拉:
Tomatoes, cucumber, avocado, chopped green onion and cilantro, lemon juice and olive oil, salt and black pepper.
Costco 買的 sausage 還剩一合, 就又做了一次醬. 這次沒有去掉腸衣, 隻是把辣腸切成小段象小肉丸子似的. 醬裏也改用了一罐 dice tomatoes 代替了tomato paste ,味道淡一點. 用了 linguine pasta.
