茴香牛肉包子, 米粉蒸排骨, 酸菜炒肉絲, 耗油牛肉炒磨菇,我的廚房.

茴香牛肉包子, 米粉蒸排骨, 酸菜炒肉絲, 耗油牛肉炒磨菇, 糖醋涼拌小籮卜

茴香牛肉包子—

皮是用麵包機發的麵:

材料:

1 ½ 杯水
1 湯勺橄欖油
3 ½ 杯高筋麵粉
2 湯勺糖,
2 茶勺發泡粉(baking powder)
2 茶勺孝母粉 (active dry yeast)

按順序把材料放麵包機, 按 dough setting, 鈴響了取出來, 揉成一條後, 分16段, 每段杆成一餅,包餡, 醒15分鍾,上開水的蒸鍋, 大火20分鍾後關火, 停3-5分鍾,開蓋吃.

餡:

牛肉(1LB多一點), 茴香(一大把), 鹽, 糖, 味精, 麻油, 一點五香粉, ½杯雞湯,1個 蛋, 一湯勺太白粉,胡椒,花椒粉.
先把肉和雞湯,蛋一起打成泥漿,加調料,再攪, 加切碎的茴香拌勻, 在盆裏畫分4等份, 每一等份包4個包子.

包得不好看, 好吃,還有湯呢.

晚飯-

米粉蒸排骨—給"萬水千山也有情"MM 的排骨讒的, 也做了. 以前上過,不說啦.

酸菜炒肉絲—裏脊肉切絲,用生抽, 澱粉,酒, 味精馬味, 下油鍋炒斷生,取出.
油鍋炒香蒜末,辣椒末, 薑米, 下筍絲, 炒幾下,加酸菜炒,加一點糖,味精, 胡椒,麻油.

這道菜可以用來下麵條,配稀飯,很好.

耗油牛肉炒磨菇—以前做過,這次加了磨菇, 有點出水,賣相不好,牛肉好嫩,好吃.

糖醋涼拌小籮卜—糖,醋(1:1), 一點鹽, 醃過.

炒菠菜—Costco 的小菠菜一袋要用幾次, 又吃了.
