涼粉,烤紅糟雞串,烤馬交魚

前一天做了涼粉和烤肉,吃得一點沒剩,一麵很高興他們愛吃,另一麵有點覺得他們沒吃夠,就再補一頓吧.

又做了涼粉,這次用了,1:7 的粉對水的比例,好象更好,更滑.

醬也改了一點,沒用芝麻醬: 醬油,紅油,蒜泥,糖,醋,味精,麻油,鹽,花椒油,花椒麵,熟芝麻,蔥. 這個醬賣相好一點,但不如前一天的好吃. 因為沒吃完.

紅糟雞串--用了 ROLL 的,"香煎紅糟雞"的醃料,蒜,美極醬油,料酒,蜜糖,紅糟,味精,鹽,醃了一天,我用了去皮去骨的雞腿肉.我是用鐵板燒來煎的,煎之前噴上橄欖油,火不能大.容易燒焦.

味很好吃,肉很嫩,又吃得沒剩.

馬交魚用,sake酒和鹽淹倆個小時,擦幹,噴油,幹煎,很好吃.

小嫩辣椒,不辣的,噴油,撒上蒜鹽,幹煎. 真不錯.

怕他們等不急,做了一個日本蛋卷先打個底.

6個蛋,5大勺水,1小勺dashi粉,1/2小勺鹽,1大勺糖,用專門的鍋煎,邊煎邊卷.

去了 Pasadena Old Town. Norton Museum, very nice collections,go on line to check it out. Someone asked me about Huntington Library, it's in southern California, they are building a big Chinese Garden,check it on line if you are interested.
