蔥花軟槍餅,蕃茄牛尾湯,涼拌黃瓜

蔥花軟槍餅

3杯自發麵粉,1杯水,拌好,揉成2個麵團,醒半小時.

把麵團揉開成長條,抹上油,撒上一點鹽(自發麵已經有鹽),鋪上蔥花(綠的部分,白的太硬會刺破麵皮),卷成長條筒,再盤起來,壓扁,放進不粘的鍋,加油和水,蓋上蓋,小火燜煎到兩麵金黃.

蕃茄牛尾湯

牛尾川過開水,換水,加薑片,料酒,扁尖,煮2小時爛為止,加蕃茄,鹽,味精,胡椒,蔥花.

涼拌黃瓜

小黃瓜滾刀切,用少量鹽醃10分鍾,洗過,瀝掉水,加醬油,醋,糖,花椒油,香油,紅油,蒜,味精
