Cookie, cookie and cookies..............
Everyone loves cookie. Cookie jar in our family can't go empty. I tried to make different kind of cookies at home. I have huge collection of cookie books, from Julie Child to Martha Stewart. The following cookies are my favorite. I like to share with you. Hope you like them as well.
每個人都喜歡餅幹。我家的餅幹罐總是保持有東東。我收藏了好多做餅幹,點心的書,從Julie Child 到Martha Stewart。下麵的幾種是我最喜歡的。希望大家也喜歡。
1) Orange puppy seeds Biscotti (這是桔子味和罌粟籽做的 Biscotti。中文不知叫什麽)

現在我來說說我是怎樣做的。非常簡單。會做一種點心,所有的點心你都會做了。
1) Double chocolate cookie (雙倍巧可力點心)Recipe: (配方見下麵)
1 cup unsalted butter, room temperature
1 cup brown sugar
1/2 granulated sugar
1 tsp vanilla extract
1 large egg
2 cups flour
1 tbsp Cocoa powder
1/2 tsp baking soda
1/2 tsp salt
12 oz semisweet chocolate chips
Preheat oven to 375F. Combine flour, salt, baking soda, cocoa powder. In a stand mixer or hand mixer, Cream butter, add sugar and mix well. Add egg and vanilla mix well. Beat until light and fluffy. Slowly add the flour mixture to the butter mixture. Mix on low speed until just combined. Stir in chocolate chips.
烤箱預熱375F。將幹料混合均勻待用。攪拌機中放入奶油,打均勻,加蛋和香草精混合均勻。攪拌機放慢速,加麵粉混合物,直到混合均勻。最後用塑膠鏟子加入巧可力豆。
Line baking sheet with parchment paper. Scoop cookie dough on the baking sheet use ice cream scooper . Keep cookies 2 to 3 inches apart. Bake 16 to 18 minutes.
烤盤上放好不粘紙,用ice cream 勺挖出餅幹麵團。麵團中間保持間距2-3寸。烤16 到18分鍾。放到架子上冷卻就可以享用了。
2) Orange puppy seeds Biscotti (這是桔子味和罌粟籽做的 Biscotti。中文不知叫什麽)
Biscotti 好多人都會做,我就不囉索了。我的這個加了桔子皮和罌粟籽。味道非常特別。
3) Oat meal raisin cookie (麥片葡萄幹餅幹)Recipe:
2 cups flour
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1 cup butter
1 cup brown sugar
1/2 cup sugar
1 tbsp vanilla extract
3 tbsp milk
2 large eggs
3 cup old fashion oatmeal
1 cup raisins
Bake cookies in 350F oven for 16 to 18 minutes. The instruction is the same. Mix the dry ingredients together, set aside. Cream the butter first, then add egg, vanilla, eggs, milk. Then low the mixer speed and mix in the flour mixture. Add the raisins at last.
烤箱350F, 烤16 到18分鍾。操作規程都一樣。幹料混和均勻,待用。奶油打發,加糖,蛋,香草精,牛奶混和均勻。攪拌機放慢速,加麵粉混合物,直到混合均勻。最後用塑膠鏟子加入葡萄幹。
烤好了,放到架子上冷卻就可以享用了。

4) Peanut butter blossom (杏仁巧可力花生醬餅幹)
These are such fun cookies. They are simple to make. It always tells you that the festival is here. It is must have in our home for Christmas.
這是一種非常有趣的餅幹。一點都不難做。每次看到它就知道節日要到了。這是我家必有的聖誕節餅幹。
Recipe:
1/2 cup shortening
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 tsp baking powder
1/8 tsp baking soda
1 egg
2 tbsp milk
1 tsp vanilla extract
1 and 3/4 cup flour
1/4 cup sugar for rolling
Chocolate kisses with Almond
Follow the normal procedures for mixing cookie dough. Shape dough into 1 inch balls. Roll the balls in the 1/4 cup of sugar. Place 2 inches apart. Bake in a 350F oven for 10 to 12 minutes:
操作規程都一樣。幹料混和均勻,待用。奶油打發,加糖,蛋,香草精,牛奶混和均勻。攪拌機放慢速,加麵粉混合物,直到混合均勻。
做形,搓成1寸的小球,滾上糖。擺好盤,間距2寸。350F烤箱烤10 到12分鍾。
Slightly cool after bake. Put Kisses candy on top of each cookie. 烤好後稍涼,杏仁巧可力糖按在餅幹上。
Cool completely on a cookie rack. 放到架子上冷卻就可以享用了。
Look at them closely. So delicious.
5) Classic sugar cookie (經典甜餅幹)Recipe:
1/2 cup butter
1/2 cup shortening
1 cup sugar
1 egg
1 tsp vanilla extract
2 and 1/4 cup flour
1/2 tsp baking powder
1/4 tsp baking soda
Direction is the same with above. Shape cookies into 1 inch balls. Roll in sugar. Placed on a lined cookie sheet. Flatten with a glass. Bake at 350F for 10 - 12 minutes.
操作規程都一樣。幹料混和均勻,待用。奶油打發,加糖,蛋,香草精,混和均勻。攪拌機放慢速,加麵粉混合物,直到混合均勻。做形,搓成1寸的小球,滾上糖。擺好盤,間距2寸。取一隻玻璃杯,杯底沾糖,把麵團壓扁,看下圖。350F烤箱烤10 到12分鍾。
6) Double chocolate brownie (雙倍巧可力布朗尼)
8 tablespoons (1 stick) unsalted butter, cut into pieces, plus more for pan
1 cup all-purpose flour, spooned and leveled
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup coarsely chopped nuts
8 ounces semisweet or bittersweet chocolate, chopped
1 1/4 cups sugar
3 large eggs

7) Cornmeal dates cookie (玉米麵果脯餅幹)
These cookies are not very sweet. You can call them healthy cookies.這種餅幹不是很甜,你可以稱它為健康餅幹。

1/2 cup yellow cornmeal
1/2 tsp baking powder
1/8 tsp salt
6 tbsp butter
1/4 cup sugar
1/2 vanilla extract
1 large egg
1 tsp grated orange zest
1/4 cup dates, or raisins (finely chopped)

Couple of cookies with a glass of milk in the evening give me a nice, relax feeling before my bed time. Let the day ends peacefully. Let the cookie sweet my day at the end.
晚上兩塊餅幹配一杯牛奶給我一個睡前暇倚的時光。讓這一天安靜地走掉,甜甜的點心讓這一天甜甜地結束。
