This is one of the easiest and tastiest chicken recipes We have come across.
1 whole chicken (3-4 lbs)
1/2 cup olive oil
2 tablespoons lemon juice
2 teaspoons paprika
2 cloves garlic, minced
1 1/2 teaspoons cumin seed
1 1/2 teaspoons coriander seeds
1/4 teaspoon turmeric
1/4 teaspoon cinnamon
1/8 teaspoon cayenne
salt and pepper to taste
Toast cumin and coriander seeds in a skillet over a high heat for 30 seconds. Grind seeds in a mortar or in a spice grinder. Combine with olive oil, lemon juice, paprika, garlic, turmeric, cinnamon, cayenne, salt and pepper. Coat chicken with the spices. Cover and place in refrigerator for at least one hour.
Roast chicken in my awesome Baby George Rotisserie (see my blog "Look At My New 'Weapon'"). And we got this juicy and tasty chicken an hour later.
