菜肉大餛燉 ( Wonton)

Ingredients:
 1. 500g (about 3 cups) all-purpose flour
 2. 1 ¼ cup cold water
 3. 450g boneless skinless fish fillets
 4. 215g groud pork
 5. 2 white or yellow onions, 250g cabbage, 250g green leak
 6. 1 tbsp soy sauce, 1 tsp dark soy sauce, ½ tsp pepper, 2 tsp salt, 1 tsp sesame oil, 1 tsp chopped ginger
 7. 1 tbsp soy sauce, 1 tsp chopped Coriander, 1 tsp pepper, 2 tsp chicken browse, 1 tsp sesame oil, 2 tsp red hot pepper oil, 1 tsp Chinese pepper oil.
Directions:
 1. Add flour and 1cup water into flour mixture, combine to form dough, relax 5 min. knead it until dough become very smooth (finger 1), relax more than 10 min.
 2. Ground fish and pork, add ingredient 6, stir in one direction until well mixed.
 3. Ground ingredient 5 with blender, and mix them with fish and pork (finger 2)
 4. Take dough out of bowl on a floured surface and cut it into 5 piece. Took one piece press down it into about 0.4 cm thick flat sheet (figure 3).
 5. Press flour sheet with noodle maker three time (form level 1 to level 5) (figure 4)
 6. Cut the sheet into squares (figure 5).k
 7. Make wonton as shown in figure 6.
 8. In a large pan boil water at high temperature. Put wonton in boiling water, and cock for 2-3 min.
 9. Put in ingredients 7 in a big bowl, add 400 cc boiling water used when cock wonton
 10. Put about 10~12 piece wonton in per serve bowl, and added a cup soup made in step 9.

Note: the materials inside hunting can have a lot of different variation. Meat can be pork only, pork + shrimp, pork + fish + fried egg, and etc. Vegetable can be celery, baby Choy, Chinese cabbage, mushroom, spinach, and etc.
