好久沒露麵...那個忙啊..也就是瞎忙..忙碌過後,自我反省,還是要好好熱愛生活...給大家上個炸蠶豆.
蠶豆,大家都認識.
1.用水浸泡過夜2.剝皮3.用開水煮1.5分鍾(小心不要煮過,否則會爛)4.撈起放涼5.涼鍋放油,把蠶豆放入油來6.開中高火,直到霹靂啪啦的響7.稍微攪拌,直到你能感覺到蠶都變硬,互相碰撞有清脆聲音8.濾油,上盤,放涼灑鹽

1.用Riceflour:Singharanut(Waterchestnut)starch:Cornstarch=5:1:1(粘米粉:菱粉:玉米粉),加水做成粉漿
2.蒸盤刷層油,放粉漿薄薄覆蓋表麵即可3.蒸三分鍾4.取出蒸盤,小心卷起5.重複#2,#3,#4至用完粉漿為止.(我是用兩個蒸盤,輪著蒸)

Frenchbread材料最簡單了,不用蛋不用油的.
11/2cupwarmwater(110Fdegree)
4cupsbreadflour
11/2tspsalt
2tspyeast
用麵包機做dough,然後搓成長條,形狀大小由你喜歡.然後擱著rise到1.5~2倍大小.375F度烤至金黃.中間噴噴水.
烤好之後表皮硬脆,裏麵鬆軟.我老喜歡那個勺子敲敲,聽那bobo的聲音.哢!
放涼後,切片,熱油鍋(什麽油都可以),調中火,開煎....煎成象下麵的樣子..

我用的分量:(2-2-2就是下麵的材料)
2mediumpotatoes
2tablespoonAPflour
2eggs
salt適量(1/2tsp)
1)土豆去皮
2)加蛋,麵粉,鹽,攪拌均勻.
3)熱油鍋
4)開煎,至兩麵金黃
分兩輪,共煎了8塊,第一輪的幹出鍋,就被搶購一空,所以沒有成品照.

關鍵步驟包括:
土豆切好後泡半小時,用papertowel吸幹水再下鍋.
炸兩輪:第一輪中火,至硬身,然後濾幹油放涼;第二輪高火至金黃.
吃完再努力減肥...這就是對薯條又愛又恨的感覺....

最近老思鄉...又懷念起小時候5分錢一根的紅豆冰棍,綠豆冰棍.(偶肯定不是80後的,老矣)
說做就做.先煮一鍋綠豆粥:
3/4cup綠豆
抓一拳頭米
7cup水
用電高壓鍋lowpressure,30分鍾.
綠豆粥就好了,按個人喜好放糖.(我放brownsugar,據說calories低些)
放涼後,倒入冰棍模.才知道這東東英文是popsiclemolds.在Michaels買的,1刀一個.
