燉肉( pork stew with chinese raddish or potato)

Ingredients:
pork leg, cut into cubes. boil it in the water, take it out when water is boiling.
wash the meat in hot water, clean all the dirty things from the meat cubes.
put 1 teaspoon oil into pan, and 1 tablespoon sugar. put the meat in when the sugar melt and become brown.

買豬腿肉,切成塊,放冷水裏煮,等到水開把肉取出。(我試過,如果不飛水,炒肉容易焦,而且用油多,燉好就嫌膩了。如果用熱水飛,腥味不容易去掉。)接著用熱水,一定要用熱水,把肉衝幹淨。鍋裏放油,不用多,快熱的時候,放一勺糖。等糖變成這個顏色就差不多。

add green onion, ginger and chinese raddish, cook 2 minutes, put in some hot water. the water should cover the meat and radish, and soy sauce, cook wine, 2 drops of vaniger, and 1 teaspoon of sugar again.
把肉丟進去炒,顏色已經很誘人了吧~。然後加蔥薑,和蘿卜繼續炒一會兒。然後放熱水,(千萬別放冷水,肉的口感會大打折扣)蓋過肉和蘿卜,加生抽老抽(我一般用萬字醬油和珠江橋),黃酒,兩滴醋,味精。雖然已經炒了糖,還是得在放點糖。

cook on low heat for 50 minutes, then turn to high heat, untill all the water almost gone. if cook potato, add when then meat has been cooked on low heat for 35 minutes or 40 minutes, then cook it with the meat cubes for 10 to 15 minutes. .

小火燉50分鍾左右,然後開大火收汁。這個方法不管肉燉什麽都好吃。土豆,海帶,冬瓜,愛吃啥就放啥。如果是土豆,就把肉燉35分鍾後,再放。
