香蕉麵包/香蕉鬆餅 Banana Bread/Banana Muffins
香蕉麵包/香蕉鬆餅做法源於雪城教會好友Patti Ferguson,後來我稍加改良,將兩杯麵粉改為1杯麵粉和1杯半糯米粉,作出來的麵包和鬆餅更黏,更有“中國風味”。做了十幾年的香蕉麵包/香蕉鬆餅,一直很受歡迎。
材料 Ingredients:
1/2杯菜油 1/2 cup vegetable oil
1 杯糖 1 cup sugar
兩個蛋,打好 two eggs, beaten
3個熟香蕉,搗碎 three ripe bananas, mashed
3 大匙牛奶 3 TBSP. milk
1茶匙香草精 1 teaspoon vanilla extract
1茶匙蘇打 1 teaspoon baking soda
1茶匙蘇打粉 1 teaspoon baking power
1/2茶匙鹽 1/2 teaspoon salt
1杯麵粉 1 cup flour
1杯半糯米粉11/2 cup sweet rice flour
1杯碎核桃仁 1 cup chopped walnuts
做法 directions:
烤爐加熱至350 華氏度 Pre-heat oven 350 F.
依次加入以上材料並攪拌均勻 Add gradually and blend the above the ingredients in order
作鬆餅 - 放入攪拌好的麵團在兩個鬆餅盤內,每盤可放12個小麵團,烤大約20-25分鍾
For muffins – put the dough in 2 muffin pans, each pan can fit 12 small doughs, and bake about 20-25 minutes.
作麵包- 剩下的的麵團,放入兩個噴過油的小麵包盤,烤大約25-30分鍾
For bread – put the remaining dough in 2 small greased loaf pans and bake about 25-30 minutes.
將鬆餅和麵包一起烤製。共做出24個香蕉鬆餅和兩條香蕉麵包。

Bake both muffins and bread together. Yield 24 banana muffins and two loafs of banana bread.
