某一天的家常晚餐:大包子,幹燒雞塊,香菇蓧麵,番茄炒蛋

有一天周末在家裏,趁虎娃虎妞睡午覺趕快來做飯,做了4個大包子,外加簡單的。。。連滾帶爬好不容易按時吃上飯了。
這是大包子,豬肉洋蔥餡兒的。。。蒸好後都沒來得及拍照,就讓虎娃虎妞和他們老爸給分了,“媽媽,還有嗎?” “媽媽我乖乖,明天還給做嗎?” 我這個媽媽當得真不怎麽樣。。。

One weekend, I tried to be hurry to make dinner while the twins were taking nap. I made four big steamed stuffing buns and some other dishes. Dinner was on time barely.
The stuffing was made from ground pork and finely chopped yellow onion. The twins loved them so much. My son asked me: ”Mama, can I have another one?” “I have been good. Can you make more tomorrow?” I should’ve made more...



幹燒雞塊:
Braised chicken with green and red pepper:
這是我們家今年(2013)第二次吃雞肉。雞肉在我們家沒有市場。每年平均吃三次,最多那年也沒超過五次,有人就開始說“我都變成那可憐的雞了..."
最近道聽途說了一件更可怕的事,說中國怕瘋牛病,不進口美國的牛肉,除非美國進口中國的雞肉,雞肉是在中國養殖,中國屠宰,中國加工,然後出口美國,可想而知,美國市場的雞肉是什麽出身嗬,別想了。。。我知道這盤雞肉是從何而來。
1. 1.5磅去骨的雞腿肉加入半小勺鹽和少許胡椒粉醃5分鍾,待用。
2. 炒鍋加熱後加入2大勺葡萄籽油,加入雞腿肉炒出油至八成熟,大約8-10分鍾,中間炒鍋加蓋2分鍾,
3. 加入一杯的青紅椒塊和洋蔥塊,1小勺薑末,1小勺老抽醬油,1小勺鹽,半小勺糖調味
4. 雞肉熟了即可出鍋

This is the 2nd time we ate chicken in 2013. Chicken has no market in our house. We normally have chicken dishes three times a year. Never exceeded 5 times a year in my memory. I do remember that year someone told me that he felt like he became that poor chicken...
I heard a horrible news lately. China refused to import American beef due to mad cow disease. Unless America import chicken from China. So, the chicken would be raised and processed in China and then exported to America. Oh no, can you imagine those chicken in the market? The best way to protect ourselves is to know where the chicken comes from. Good thing is that I know where this dish came from. 
1. Boneless chicken legs about 1.5 lb. Add 0.5tsp salt and 0.5 tsp fresh grounded pepper mix and stand for 5 mins.
2. Heat a pan in medium high heat till very hot but not smoking. Add 2 Tbsp grapeseed oil, add chicken and stir fry till the meat is almost cooked thru, ~8 to 10 minutes 
3. Add 1 cup chopped green and red peppers and yellow onion. 1 tsp minced ginger, 1 tsp dark soy sauce, 0.5 tsp sugar and 1 tsp salt
4. Continue to stir fry until the chicken is fully cooked thru and serve hot. You can add spicy sauce if you prefer.






香菇蓧麵:
Oak flour noodle with dry mushroom meat sauce
我也不確定蓧麵是出自哪裏,山西,陝西還是陝北,回國有吃過,非常好吃,但不曉得怎麽做的,在餐廳想點蓧麵要預先訂,很有一層神秘感噢,有一次在電視上看到了介紹,忍不住一定要試試。所說的燕麥粉大概就是美國的Oak flour ,到處都是。。。如果不是,也就不是了,不必和我較真,我做的是家庭餐,我家人吃了好吃,有益健康勝於世界上任何東西,我做主婦心滿意足!哈!

I had this dish when I was in China. It is originally from midwest China.It was so delicious. I know that it is made 不要 oak flour but I don't know how they made it. It is always mystery for me. Until one day, I saw it on TV. I can't wait to try it.

蓧麵的做法:
1. 有機麥片,打磨成粉,加開水和麵,待麵團稍涼不燙手,揉成麵團,麵團比餃子麵稍硬些,很想麵包麵團,一定不能太硬。(我家的餃子麵比較軟)
2.麵團分兩份,每份揉成長條,~1/2 到3/4 英寸粗,切成3/4 英寸的大小塊,每個小塊在兩隻手掌中撮成一頭大,一頭少的小魚
3.擺在盤中,上蒸鍋蒸20分鍾,取出待用

Oak flour noodle:
1. 1 and 1/2 cup Organic oak flour, you can use organic oak meal and grind them to flour. Add 1/2 cup boiling water, mix in with spoon. Wait to cool down enough to handle then roll into dough, like bread dough.
2. Divide the dough into 2 parts. Roll each part into a long rope, ~1/2 to 3/4 inch round. Cut each rope into 3/4 inch pieces. (To prevent the dough is too sticky, make sure dust extra oak flour on the working area.) Between two palms shape each small piece one side is big and another side is thin, like little fish shape
3. Arrange all the "little fish" in a plate and steam them for 20 minutes, set on the side waiting for the mushroom meat sauce  

揉成麵團,麵團揉成長條... Make ropes


切成3/4 英寸的大小塊... Cut each rope into small pieces.





每個小塊在兩隻手掌中撮成一頭大,一頭少的小魚
Between two palms shape each small piece one side is big and another side is thin, like little fish shape


 擺盤。。。
Arrange all the "little fish" in a plate



擺好上蒸鍋蒸熟。
Steam them for 20 minutes, set on the side waiting for the mushroom meat sauce  


香菇肉末醬汁的做法:
材料:1大勺葡萄籽油,泡好的香菇6朵切碎,0.5磅豬肉餡,1/4杯洋蔥丁,0.5杯紅椒切丁,1 小勺鹽,0.5小勺糖,1小勺老抽醬油,胡椒粉少許, 1/2杯水或高湯,2大勺水澱粉
1.
炒鍋加熱,放入葡萄籽油,加入豬肉餡炒出油,
2.
加入洋蔥丁,香菇,紅椒丁,炒8分熟,
3.
加入水燒開,再加入水澱粉
4.
加入鹽,糖,醬油,調好味
5.
出鍋澆在蓧麵的上麵即可

Make mushroom meat sauce:
Ingredients: 1Tbsp grape seed oil, 6 large dry mushroom, rehydrated and chopped well, 1/2 lb ground pork, 1/4 cup chopped onion,1/2 cup chopped red pepper, 1tsp salt, 1/2 tsp sugar,1 tsp dark soy sauce, pinch fresh grounded pepper, 1/2 cup water, 2Tbsp corn starch water solution

1. Heat a pan on medium high till hot. Add 1Tbsp grape seed oil, add ground pork and cook for 3 - 4 minutes
2. Add onion, mushroom, chopped red pepper and cook till almost done, ~2 minutes
3. Add water or stock heat to boil, then add corn starch solution
4. Add salt, sugar, soy sauce to taste
5. Remove from heat and pour on the top of the oak flour noodles. Serve immediately


 
番茄炒蛋
Stir fry eggs and tomatoes
這是我家虎妞最愛吃的一道,她稱這道是“飯飯(兒)蛋蛋(兒)" ,如果問她晚飯要吃什麽,90%會要飯飯(兒)蛋蛋(兒)", 剩下的10% 會說”Pizza". 有時我們和她開玩笑就叫她“飯飯(兒)蛋蛋(兒)" 。大家都會做,我就不必在這裏羅嗦了。不過有一點,我用的番茄是自己做的西紅柿罐頭,不是新鮮的西紅柿,味道一樣
This is my daughter's favorite dish. She loves it so much. If you ask her what she wants for dinner, 90% of time she will tell you that she wants rice and eggs (far far dar dar). Another 10% of time she will tell you "pizza". It is very simple to make.
1. Cook 4 scramble eggs and set aside. 
2. Add skinned tomatoes into the pan and stir fry for 2 minutes. Add salt and pepper to taste. Mix in scrambled eggs and serve immediately
