Easter Brunch: 複活節的早餐Easter Sunday morning was a lazy morning. Got up pretty late. No sense to make too complicated breakfast. Looked thru in the refrigerator and found basic stable in the house which is milk, eggs and bacon. Let's have blueberry smoothie, mini quiche Lorraine and homemade Rye bread with homemade peach jam. Simple and healthy.
上周複活節星期天的早上是個懶散的早上,起得很晚,不想再跑出去吃早餐,也沒必要做複雜的早餐。打開冰箱巡視了一圈,家裏有基本的原料,牛奶,雞蛋和鹹肉。還有我自己做的黑麥麵包,就用它們來做一頓簡單又健康的早餐吧。
早餐食譜:藍莓冰莎,小小早餐蛋撻,黑麥麵包配自己家做的桃子果醬。
1) Blueberry smoothie: 藍莓冰莎2 cup frozen blueberry add 1 cup homemade grape juice. Break down in a blender. It is smooth and refreshing.
2杯冰凍的藍莓加1杯自己家做的葡萄汁。在攪拌機中打碎並攪拌均勻。自己家做的藍莓冰莎清涼又爽口。早餐代替果汁非常棒。
2) Mini Quiche Lorraine. 小小早餐蛋撻Pie dough:3/4 cup flour
1/4 cup shortening
Pinch of salt
3 Tbsp cold water
Quiche Lorraine filling: 3 eggs
2 pieces of bacon (cooked and break into small pieces)
1/3 cup sharp chaddar cheese (shredded)
2 Tbsp milk
Pinch of salt and pepper
A: roll the dough into 1/4 inch thick
B: Fit the dough in a small container
C: Use a fork to poke few holes
D: Beat 3 eggs mix with 2 Tbsp milk, add cheese and bacon pieces. Add pinch of salt and fresh grounded peppers
E: Fill the container with the egg mixture. Bake in a preheated oven at 375F for ~20 minutes.
蛋撻皮3/4杯麵粉
1/4杯白油
一點鹽
3大勺冷水
早餐蛋撻液3隻蛋
2條煎好的鹹肉切成小塊
1/3杯切成絲的起絲
2 大勺牛奶
一點鹽和黑胡椒
A:蛋撻皮擀成1/4厚
B: 把蛋撻皮放如容器中
C: 蛋撻皮上用叉子紮幾個孔
D: 3隻雞蛋加2 大勺牛奶混合均勻,加入起絲,切成小塊的鹹肉,鹽和胡椒粉,再混合均勻。
E: 將蛋液混合物倒入容器中,放入預熱好的烤箱中375度,烤~20分鍾。
Assemble the breakfast: 早餐組合在一起
Sliced few homemade Rye bread and toasted in a toaster. Serve them with homemade peach jam. Couple drop of tobasco sauce onto the Quiche gave it a little kick. Glass of blueberry smoothie is rich in Vitamins. This simple breakfast provided whole grain, right amount of protein and full of Vitamins. It's great start for a day.
切幾片自己家做的黑麥麵包,放在toaster裏烤一下,抹上奶油和自己做的桃子果醬,擺在盤子中,烤好的小早餐蛋撻加上兩滴美國辣醬,給早餐加了一點跳躍,一杯藍莓冰莎含有豐富的維他命,清涼又爽口,整個早餐提供了全麥營養,足夠的蛋白質和豐富的維生素。是一天的好開始。
Easter Dinner:複活節晚餐This year Easter dinner is also quiet simple. All I used is my best friend, the oven.
今年的複活節晚餐也非常簡單。所有的餐都是我的好朋友“烤箱”幫我做的。
Main course: Baked ham with honey glaze
Side dish: 1)Oven roasted homegrown butternut squash
2)Sweet corn salad
3)Homemade butter dinner rolls
Dessert: Blueberry upside down cake
主餐:蜜汁烤火腿
配餐1)烤自產的奶油瓜
2)甜玉米色拉
3)自己做的奶油晚餐麵包
甜點:
藍莓翻轉蛋糕
Main course: Baked ham with honey glaze
Brush a ham with mixture of soy sauce, honey and red wine vinegar (4:2:1). Bake it in a 350F oven for ~2hrs. Brush with the sauce every 30 minutes during the cooking.
主餐:蜜汁烤火腿
整隻火腿用鋒利的刀切成十字,刷上醬油,蜂蜜,和紅酒醋的混合物,混合比例為4:2:1。在350度的烤箱中烤2小時。每隔30分鍾刷一次醬油混合液。
Side dish1:Oven roasted homegrown butternut squash
Do you remember the butternut squash from our garden? We still have some from last year harvest. They are kept well and delicious.
配餐1:烤自產的奶油瓜
還記得我家菜園種的奶油瓜嗎?它們保存期很長。味道一流。
Cut the butternut squash into strips and roast them in the same pan with ham. The juice from the ham give the butternut meaty flavor. Simple and delicious.
奶油瓜去籽,切條,放入烤火腿的同一個烤盤中烤。火腿流出的汁給奶油瓜帶來肉香的味道,簡單又美味。
Side dish 2:Sweet corn salad
I canned our Sweet corns from our garden last year. We have been enjoying them all year long.
1 quartz canned sweet corns
1/4 cup chopped green onion
1 Tbsp olive oil
1 Tbsp red wine vinegar
Mix all together, pinch of salt and pepper to taste. You can't get more simple than this.
配餐 2:甜玉米色拉
自家菜園種的甜玉米,去年我做了很多罐頭,直到現在還有好多。
1 隻大的甜玉米罐頭
1/4杯青蔥丁
1大勺橄欖油
1大勺紅酒醋
將所有材料混合均勻,加鹽和胡椒粉調味,還有比這再簡單的菜嗎?

The whole dinner was cooked in the oven. It is very simple and delicious.
整個晚餐都是在烤箱中做的,很少油煙,簡單又美味。
Dessert: Blueberry upside down cake
Easter also means Spring is here. We like some fruity desert this time. Then, I had an idea to try a blueberry upside down cake. I made up the recipe by myself. It turned out perfect. We love it so much.
Recipe:
1 cup frozen blueberry (fresh berry is fine)
2 Tbsp brown sugar
1 cup flour
2 tsp baking powder
1/2 cup butter
1/2 cup sugar
3 eggs seperated
3 Tbsp milk
1 tsp vanilla
The procedures are quiet simple. See picture below.
A: Mix dry ingredients together. Cream butter, sugar and vanilla. Add egg yolks, one at a time. Add flour mixtures along with milk.
B: Use another bowl to beat the egg whites until it forms stiff peak. Mix egg white to the batter carefully.
C: Butter a cake pan and line a parchment paper at the bottom. Sprinkle brown sugar.
D: Sprinkle blueberry on the bottom of the cake pan
E: Pour cake batter on top of the berries. Bake in a preheated oven at 350F for ~20 minutes or until a toothpick came out clean.
甜點:藍莓翻轉蛋糕
複活節也有春天來臨的意義。甜點最好也帶一點水果的氣息,我想出來個主意,試試藍莓翻轉蛋糕。配方是我自己“捏造”出來的,蛋糕烤好非常好,我們真是好喜歡。
配方如下:
1 杯冰凍藍莓(新鮮的也好)
2大勺紅糖
1杯麵粉
2小勺發粉
半杯奶油
半杯白糖
3隻雞蛋(蛋黃和蛋白分開)
3大勺牛奶
1小勺香草香精
做法看下圖:
A: 取一隻小盆將麵粉和發粉混合均勻。混合器中打發奶油,糖和香草香精。一隻一隻地加蛋黃,再加入麵粉混合物和牛奶。
B: 另取一隻盆打發蛋白。把蛋白小心混合入蛋糕麵糊中。
C: 蛋糕烤盤抹上奶油,放好烤盤紙。撒上紅糖。
D: 撒上藍莓
E: 最後倒入蛋糕麵糊。放入350度的烤箱烤20分鍾左右,或者直到牙簽插入出來沒有麵糊。

這是藍莓翻轉蛋糕的成品。有人已經等不及了,還沒等我拍照,蛋糕已經少了幾塊。。。
This blueberry upside down cake is so creamy and fluffy. The blueberries brought a touch of the Spring. A nice part of is that it is not hard to make at all. You might like to try it one of these days...

Butternut squash is one of our favorites, too. We don't have home grown ones, though.
THe blueberry upside down cake is a good idea to eat blueberries besides cobbler. I made pineapple upside cakes before. It never occurred to me to sub pineapple with blueberries until now. Good idea. I will definitely try this, very soon. Thanks for sharing all your tasty home cooking with us.
