In resent years, blueberry is famous for antioxidant and anticancer function food. Homemade blueberry pie is also getting popular. It has the right touch of tangy and perfect sweetness. It fits all nationalities for who look for a healthy and full body desert.
近年來,藍莓以其獨特的抗氧化,防癌功效而著稱。藍莓派也隨之深受人們的青睞。我本人對藍莓派特有的tangy果酸味道和完美的甜度非常讚賞。這道具有健康意義的甜點適合中西方各國人的口味。
1) Make pie dough: 第一步做派皮1 and 3/4 cup flour
1/2 cup shortening
1/4 tsp salt
5 tbsp cold water
Mix flour and shortening together. Add water 1 table spoon at time till flour mixture gets together. Do not over mix. Make pie crust and lay it in the pie plate. Shape the edge.
將麵粉和白油混合好,慢慢加入水,一勺一勺地加直到麵形成團,不要揉過頭。擀成圓麵片,放入9寸的派盤中,盤邊整型。
2) Make blueberry filling:做派餡3 pint fresh blueberry (frozen berry is OK): (1 pint crushed berry, 2 pint whole berry)
1 cup sugar
1 tbsp lemon juice (or juice from half of lemon)
2 tbsp flour
Mix well all above together.將一杯的藍莓壓碎,再將以上所有材料混合均勻。
3) Pour in the pie. 倒入派皮上4) Make crumb topping:做酥麵1 cup flour
5 tbsp unsalted butter
1/4 tsp salt
1/3 cup sugar or brown sugar
Mix everything together and put it on the top of blueberry mixture.
將所有的材料混合均勻。倒在藍莓混合物的上麵。
5) Bake the pieCover and bake the pie in a pre heated oven at 425F for 50 minutes. Low temperature to 350F. Uncover, bake another 60 minutes or until filling is bubbled and crumb topping is golden brown. See below picture:
烤箱預熱425F,藍莓派蓋上錫紙,烤50分鍾。然後烤箱降溫至350F,拿掉錫紙,再烤60分鍾或直到派餡冒泡泡,酥麵金黃。看下圖:
