Korean & Japanese food:韓日餐集錦:石鍋拌飯,辣年糕,韓國海鮮煎餅,壽司等

Lots of people like Korean food. We do too. Remember back in China, we have a Korean street in my home town. There are a lots of dishes I couldn't name them. But I loved all. We love Korean BBQ the most. It is pretty hard to do it at home since it is too smoky. Here are some dishes that I like to cook at home.
記得在中國,我們那有個韓國一條街,很興旺。韓國餐廳滿街都是。好吃的韓國菜讓人不停的咽口水。近年回家,韓國一條街變成了韓國區。韓國餐廳更是數不盡。我們最喜歡韓國烤肉,但是韓國烤肉煙太大,不適合在家做,下麵的幾個菜很適合家庭烹調。

1) 石鍋拌飯: Rice in the clay pot
It is family dish. Cooked rice in a hot clay pot. Top it with green vegetable, pickled vegetable (Kimchi), shredded meet and fried egg. Everyone love it.
這是韓國的家常餐。加熱的沙鍋加少許芝麻油,加入煮好的米飯,上麵撲上熟的青菜,炒好的肉絲,韓國辣白菜,最後加上一隻煎雞蛋。非常美味。人人喜愛.

2) 韓國冷麵: Korean cold noodle soup:
This is famous in Korea. Buck wheat noodle with sliced beef or pork and shredded cucumber and pickled vegetable (kimchi), etc..
蕎麥麵,冷水洗好,加牛肉片,黃瓜絲,韓國辣白菜,少許香菜, 芝麻,半隻熟雞蛋,韓國辣醬。牛肉湯放涼,用醋,糖,醬油,鹽調好。非常爽口。



3) 韓國炸醬麵: It is very close to North East Chinese Cuisine. Cooked noodle with soybean paste meat sauce, add shredded cucumber, green onion, carrots, cilantro, and Korean spicy sauce. Yummy!
韓國炸醬麵,和北方的炸醬麵很類似。麵煮好,豆掰醬加肉末和蔥,少許糖炒好,加黃瓜絲,蔥絲,香菜,胡羅卜絲,韓國辣醬。非常可口。

4) Korean Rice cake: 韓國辣年糕
Stir fry Rice cake with onion, carrot. Add some Korean spicy sauce and sesame seed. Delicious!
韓國年糕,洋蔥,少許胡羅卜片,一起大火炒,加些韓國辣醬和少許芝麻。好好吃!



5) Korean seafood pan cake: 韓國海鮮煎餅:
It is very popular in Korean. Everyone love it. It is made of oysters, squid, green onion, eggs, sweet rice flour and salt & pepper. Mix all together add some water to make batter. Pan fry it in a non-stick pan till golden brown.
等這道菜在韓國家喻戶曉。主要原料是牡蠣,尤魚,青蔥末或絲,雞蛋,糯米粉,少許鹽,胡椒粉。加水調成糊。在不粘鍋中兩麵煎黃既成。

Here is the final product. So yummy! 這是最後的成品。很好吃!


6) Pickled Vegetable or Kimchi: 韓國辣白菜
Kimchi is the mush have dish for every meal in Korea. I am sure you all know how to make them. 這是韓國人家每餐必備的。大家都會做。我就不多說了。
To Rosejyy2000: Here is how to: 大白菜切大塊,用粗鹽揉1分鍾,1小時後冷水衝淨,空幹水,加糖,蔥絲,薑,大蒜,一隻切成片狀的蘋果或梨,韓國辣椒麵,韓國辣醬,少許鹽調好味既成。24小時後味道最佳。

中國炸醬麵馳名中外,在中國,包括台灣不下幾十種version。我吃過日本的炸醬麵,很不錯,miso的味道重了一些。韓國的炸醬麵給我留下了很深的印象。不是因為辣的原因,是因為它的tangy味道。我覺得很值得推薦給大家。You don't have to like it.
我本人在東北長大,當然知道什麽是炸醬麵。家裏有位遠親的姥姥是老北京。她的炸醬麵真是一絕。但是我媽媽做的更是我的最愛,因為除了美味還有媽媽的愛。
如果單單是介紹韓國的炸醬麵就被指責為"哈韓"也衛冕太過分了。我的這篇文章目的是切磋廚藝。歡迎大家的指教。至於我的 patriotic, you have no right to point finger at me!

Hi Pleasanton, Thanks for your visit! It is funny to see some people are so sensitive. There is no need to argue about "chicken and egg". You are correct! what I meant was our 炸醬麵 with 韓國 style. I have to say it was different and was interesting twist with Korean Cuision. Now I am accused not being patriodic. That has gone too far!

什刹海 回複 悄悄話 哈韓不至於哈到連自己國家的美食都說成是韓國的了!
炸醬麵不是韓國的,是山東人帶到韓國的,韓國人都承認是中國的炸醬麵。我們北京人做的炸醬麵也很正宗。我在德國學生宿舍的鄰居就是一個韓國人,還問我可不可以給她做正宗的炸醬麵吃。
