兒時的記憶--肉碎馬鈴薯 Potato and Minced Meat Stew

這道肉碎馬鈴薯是馬來西亞一個非常家常的菜。各家的做法都會有點不一樣,有的喜歡把土豆切丁有的喜歡把土豆切條狀,而我家是一隻都把土豆切條狀的。
 
我小時候和爸媽住在阿公阿嬤家,阿公阿嬤是開雜貨鋪的,所以家常三餐做飯特別方便,經常做店裏賣的幹糧和食材。所以這道肉碎馬鈴薯阿嬤經常做,我特別愛吃。

 

昨天午飯時做了這道菜,二弟吃了就說,有阿嬤做的味道哦!

 

Potato with minced meat is a typical dish for most Chinese family in Malaysia. There may be different variations of this dish in different families. Some like the potato cubed, some like it in sticks. In our house, it is always thickly sliced.

 

I made this for lunch yesterday and my brother who is visiting says it tasted just the way grandma used to made it.

 

材料:

3-4 隻中型 馬鈴薯

1/2 杯/120 gm 肉末 (用 1/4 tsp 鹽, 1 tbsp 料酒, 一撮黑胡椒粉和幾滴麻油醃上十分鍾)

1 tbsp 的蔥酥或紅蔥切片

1 tsp 蒜茸

1 tsp 芡粉 (用 3 tbsp的水兌上)

 

調味:

1/2 tsp 黑醬油/老抽 

2 tbsp 醬油/生抽

 

一點 或 適量的鹽

 

Ingredients:

3-4 Potatoes

1/2 cups/120 gm of ground meat (Marinate with 1/4 tsp of salt, 1 tbsp of cooking wine, a pinch of black pepper powder and a few drops of sesame oil)

1 tbsp of sliced shallot or fried shallot

1 tsp of minced garlic

1 tsp of cornstarch (mixed with 3 tbsp of water)

 

Seasoning:

1/2 tsp of Dark soy sauce 

2 tbsp Light soy sauce

A little salt or to taste

 

 

 

 

 

1. 先把肉末醃好,我用了火雞肉末。

 

2. 把馬鈴薯削皮切成大約1/2 cm厚的片,鍋裏熱上1 杯的油,把馬鈴薯片入鍋炸至邊上變酥,不必炸透。取出滴幹油。

 

3. 把熱油倒出,留下1大匙,把蒜末和紅蔥煸香。

 

4. 把肉末入鍋炒散,倒入1杯水煮滾,把土豆片,醬油,老抽和鹽調味,煮至馬鈴薯變軟。

 

注:喜歡甜味的可以一點點的糖調味。

 

5.把芡粉用水兌開,倒入鍋裏打芡,然後把爐子熄了,撒點蔥花即可。

 

1. Marinate the ground meat (I used ground turkey) with 1/4 tsp of salt, 1 tbsp of cooking wine, a pinch of black pepper powder and a few drops of sesame oil.

 

2. Peel and slice potato to about 1/2 cm thick, heat up about 1 cup of cooking oil, fry the potato slices until the potato is a little crunchy at the edge.

 

3. Take out excess oil and leave about 1 tbsp of oil in the wok, stir in minced garlic and shallot, fry until fragrant.

 

4. Add the marinated ground meat, keep breaking the meat with a spatula until the ground meat loosen up.

 

5. Add 1 cup of water and bring to boil, add the potato pieces and season with dark and light soy sauce, add a little salt if needed. Cook until the potato soften. 

 

6. Stir in cornstarch that dissolved in 3 tbsp of water, switch off the stove when the gravy thickened. Sprinkled some chopped spring onion.
