上周末我們家和幾個朋友聚在一起做Chaat派對,Chaat是印度街頭小點心的統稱,用很多不同的脆餅,土豆,醬料混合配搭而成。
派對上用的土豆還剩下兩隻,我今天就拿來做了這個馬鈴薯塊,下午就著熱熱的Masala chai吃,很是不錯!
We had a Chaat party over the weekend, our friend Iena helped boiled some potatoes for the Papdi Chaat and left me with two.
Since my husband N has been in the Chaat mood lately, I turned the potatoes into these cutlets, N enjoyed it in the afternoon with a cuppa hot Chai.
材料:
250 克/兩隻中型 土豆
1/4 杯 冷凍青豆
1/4 杯 切碎的芫荽/香菜
2 隻青辣椒
1 大勺 低筋麵粉 或 硬麥粉
香料:
1/2 小勺 孜然 Cumin Seed
1/2 小勺 芥菜籽 Mustard seed
1/4 小勺 黃薑粉 Turmeric powder
1/4 小勺 辣椒粉 chilli powder
1/8 小勺 印度五香粉 Garam Masala
鹽適量
Ingredients:
250 gm of Potatoes (2 medium size)
1/4 cup Peas
1/4 cup chopped coriander leaves
2 Green chilies
1 tbsp of cake flour (or semolina flour)
Spices:
1/2 tsp Cumin Seed
1/2 tsp Mustard seed
1/4 tsp Turmeric powder
1/4 tsp chilly powder
1/8 tsp Garam Masala
Salt to taste
1. 把香菜和辣椒切碎,青豆洗淨入微波爐轉1分鍾.
2. 馬鈴薯煮熟去皮,和青豆一起壓爛。加入所有香料和芫荽拌勻。
3. 手掌沾濕後取兩大勺的馬鈴薯泥,握成球狀後壓扁,記得握得緊實一些,不然煎的時候會散開。
4. 把馬鈴薯塊薄薄地沾上低筋麵粉/硬麥粉。平底鍋加熱1/4 杯油,把馬鈴薯塊入鍋中火煎至兩麵金黃即可。
1. Finely chopped coriander leaves and chili, wash peas thoroughly and microwave it for 1 minute.
2. Boil the potatoes until cooked, peel and mash it together with the cooked peas.
3. Add all spices, salt,chili and coriander leaves, mix well. Wet palms, take 2 tbsp of the mashed potatoes and roll it into a ball, lightly press to flatten it. Repeat for remaining potatoes.
4. Lightly coat the cutlets with cake flour/low gluten flour or semolina powder, shallow fry it with little oil till both sides golden brown in color.
吃的時候沾番茄醬或薄荷青醬。
