剛從歐洲搬來美國的那會兒,覺得自己簡直來到了美食天堂,超市裏的物價和歐洲比起來直接就是白菜。當時很愛去Costco買肉和水果,我尤其喜歡買Costco的三文魚,切塊醃製烤魚塊,做咖喱,烤魚都很方便也衛生。
後來漸漸地就不怎麽去Costco了,兩口之家買Costco的東西其實是一種壓力,經常吃不完丟了也浪費。而且我也開始對口口是肉的三文魚厭倦了,吃海鮮長大的我還是喜歡吃整魚啊!帶骨帶頭的魚怎麽吃起來就鮮很多呢?
後來被我在Hmart發現了三文魚骨腩,一大盒才七美刀左右,買回來居然讓我給弄出三道美食,這算不算很會持家呢?(笑)。
When we first came to the States, we were amazed by the price of foods here, coming from European country makes everything in the USA looks so cheap. We used to go to Costco and bring tonnes of fruits and meats and I will be literally cooking up a spree!
Salmon was one of our favourite purchase, I was initially happy happy with the cut, as it is boneless and it is very easy to clean and prepare. We stopped buying from Costco shortly after that, the reason is not hard to figure. The size of everything from Costco are humongous with a family of two, it started becoming a burden and I did have to throw away many rotten vegetables.
Coming back to the salmon, I got tired of the meaty tasteless fillet, I grow up eating whole fish and enjoys sucking on fish bones and fish head. So we stopped buying salmon for a long time.
Until one day I discovered fish belly and fish bones in Hmart, I bought a packet home, marinate and deep fried them, I manage to turn a 7 dollar box into three different dishes! How economical is that, not to mention I thoroughly enjoyed the bones and succulent belly!
材料:
300 克 三文魚腩 切段 加點鹽和胡椒粉醃製20分鍾
2 根蔥
4-5 片 薑
2-3 隻 蒜瓣
1 tsp 芡粉 混合1/2杯水
3 tbsp 低筋麵粉
調味:
2 tsp 蠔油
1 tsp 醬油
1 tsp 曬油/黑醬油
1/4 tsp 糖
1/4 tsp 麻油
1/2 杯水
Ingredients:
300 gm Salmon belly, cleaned and cut into 2 inches pieces
2 spring onions cut into 2 inches in length
2-3 cloves of garlic Sliced
4-5 slices of ginger
1 tsp cornstarch dissolved in 1/2 cup of water
3 tbsp of low gluten flour
Seasoning:
2 tsp Oyster sauce
1 tsp Light Soy sauce
1 tsp of caramelized soy sauce
1/4 tsp sugar
1/4 tsp sesame oil
1/2 cup of water
1. 把三文魚肚腩用一點的鹽和胡椒粉醃上20分鍾,沾上一層薄薄的低筋麵粉,入油鍋炸酥起鍋瀝幹油備用。
2. 把薑蔥蒜準備好,鍋裏熱上1 大匙的有,把薑蒜煸炒香之後加入所有調味料和1/2杯水,煮滾之後加入魚塊翻勻,加入芡粉水,再次煮滾後加入蔥段,把魚塊和醬汁倒入一口瓦煲裏煮滾即可上桌。
注:如果喜歡看可以上桌前撒一點點的白胡椒粉增香。
1. Cut salmon belly into pieces and marinate with some pepper powder and salt for 20 minutes. Dredge the fish pieces with some cake/low gluten flour, deep fry in a fryer until crunchy.
2. Heat up 1 tbsp of oil in a wok, add ginger and garlic slices and stir until fragrant, add all ingredients listed under seasoning and 1/2 cup of water, bring to boil, add the fried fish's belly, add cornstarch water, bring to boil again, add the spring onion.
3. Transfer the whole content to a heated clay pot, serves hot.
Note:You can sprinkle some white pepper powder before serving.
