Sometime the best food that brings us right back to our memories are the simplest of all. Just like this fried rice,it is easy to prepare, and tasty to eat. The only trick is to have the right ingredients.

有些食物用料樸質,做法簡單,可味道卻特別的難忘。這個炒飯就是那樣的一個食物,它不華麗,做法也可以有更多的變化,可即使在最簡單的時候,它也讓人覺得滋味無窮。
那些在外的馬來西亞遊子。你們是否還記得這一道樸質的鄉村炒飯?
Ingredients:
2 bowl of cold cooked rice(Thai Jasmine rice preferred)
1/2 bowl of Anchovy --White color preferred (cleaned and wash)
1 Medium size onion (sliced)
3-4 Thai or green chilies (Sliced)(Reduce if you don't like it too hot)
Some Chopped Spring Onion
1 Fried egg Optional
Seasoning:
Few drops of Sesame Oil
Salt to taste (about 1/2 tsp)
材料:
2 碗 冷飯 (最好是泰國香米飯)
1/2 碗 江魚子 Anchovy -- 白肉的最佳(去內髒洗淨)
1 隻中型洋蔥 切絲
3-4 根 泰國辣椒 切段 (不嗜辣可以減半或用一點辣椒粉代替)
一點 蔥花
荷包蛋一個 Optional
調味:
麻油幾滴
鹽適量 (大約 1/2 tsp)
1. In a cooking wok, heat up 2 tbsp of oil, and fry the anchovy until crispy, drain and set aside. (Alternatively, to save time, you can take it out half cook, drained, and microwave it for 45 seconds - 1 minute, a sure method to give you crunchy anchovies).
2. Stir in onion and chilies, stir until fragrant, add rice, and keep stirring until the rice are all loose and slightly "jumping" in the wok, add salt and a few drops of sesame, turn well, remember not to add too much salt as the anchovies are already salty.
3. Turn off the stove, and now add the anchovies, mix well, add some spring onion, Serve with fried egg.
1. 鍋裏下兩大匙油,先把江魚仔炸脆備用。(可以半脆的時候撈起來,瀝幹油,再入微波爐 45 秒-1 分鍾,這樣做鐵定脆的。)
2. 鍋裏剩下的油把洋蔥和辣椒炒香,倒入米飯,炒散,至火候足之後,加鹽調味,滴入幾滴麻油翻勻。熄火,倒入剛剛炸脆的魚仔,翻勻,撒上蔥花,加上個荷包蛋,趁熱開吃!
