【鬆子燕麥曲奇】Chewy Pine Nut Oatmeal Raisin Cookie

During these cold rainy autumn days, our favorite thing to do would be a cuppa hot tea and some spicy homemade cookies......

So I made these Chewy Pine Nut oatmeal Raisin Cookie, a special treat for special season--- my favorite fall!
 
天涼了我們最喜歡下午時分吃茶點,一杯熱騰騰的奶茶加上自己烤的曲奇餅,很寫意,很舒服。。

今天做的這個是鬆子燕麥曲奇,鬆軟好吃。


Ingredients:
1/2 cup Butter
1/2 cup heavy Cream
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1 1/2 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon powder
1/2 tsp salt
2 Cup oatmeal
1 cup raisin
1 cup pine nuts/any type of nuts
 
材料:
1/2 杯 無鹽黃油
1/2 杯 奶油
1 杯 紅糖
1/2 杯 白糖
一隻 雞蛋 
1 小勺 香草精 vanilla extract
1 1/2 杯 全麥粉
1 小勺 小蘇打
1 小勺 桂皮粉
1/2 小勺 鹽
2 杯 燕麥
1 杯 葡萄幹
1 杯 鬆子
 
 

First preheat the oven to 350 degrees(175 Celsius), bake the pine nut for 8 minutes, cold it and grind it coarsely.

In a large mixing bowl, cream together Ghee, heavy cream ,brown sugar, white sugar, Vanilla Extract and egg.

In another mixing bowl, mix together oatmeal, baking soda, cinnamon powder, salt, wholewheat flour, raisin ( I also add in a handful of remaining mixed cereal we have at home.)

Mix together the creamed ingredients and the dry ingredients, and when the ingredients are well mixed, add the pine nut, and mix it well with the other ingredients.

Drop by rounded spoonful on baking sheet (with parchment paper), turn it into the oven (preheat to 350 degrees) and bake for 12 minutes. Cool it on cookie cooling rack, before storing it.

Here is my Chewy Pine Nut Oatmeal Raisin Cookie.

首先把烤箱加熱至350度(175攝氏度)。

鬆子入烤箱烤一烤,大約8分鍾,然後冷卻、用攪拌機攪成粗粒狀。

然後在一個大盆裏,把Ghee, heavy cream, 紅糖、白糖、Vanilla Extract和雞蛋攪拌成cream的狀態。

然後把全麥粉、小蘇打、桂皮粉、鹽、燕麥葡萄幹、還有一些雜果類什麽的都可以下一點。。全部稍微攪拌一下。

把剛剛的幹料倒入濕料裏拌勻。。然後加入鬆子。

再拌勻,然後用一個小茶匙掏出拌勻的材料,弄成球狀,放到有parchment paper的烤盤上,入預熱350度的烤箱,烤12分鍾,然後放到cookie架上待涼就可以了。
